1 c Sugar 2 ts Baking powder 1/4 ts Salt 1 c Blueberries 2 Eggs 1/4 c Sugar 1/4 ts Cinnamon 2 c Flour 1/2 c Warm milk 1/2 c Margarine Cream sugar and margarine, add the eggs and beat well. Add the flour,baking powder and salt mixture then the 1/2 c warm milk. Add lastly the blueberries which have been tossed with 2 tblsp. of the flour. Put in a 9 in. greased and floured pan and sprinkle with the 1/4 c sugar mixed with the 1/4 tsp. cinnamon. Bake in 350 oven for 35 min.

This cake is so moist it melts in your mouth and very yummy... I have made this cake many times and on the farm stand this was always a good seller.. Wow went to find a link for book and Barnes and Noble had a paper back for $.99 wow that is a great price and great book... I have a sign copy from her cause at her senior years where is lived I worked and had many chat with this wonderful women... MELT IN YOUR MOUTH BLUEBERRY CAKE 2 eggs separated 1 c sugar 1/2 t salt 1/2 c shortening your choice I use CRISCO 1 t vanilla 1 1/2 c sifted flour 1 t baking powder 1/3 c milk 1 1/2 c fresh or frozen blueberries... use more or less or how you like.. Beat egg whites until stiff add about 1/4 c sugar to keep egg whites stiff cream shortening ,add salt,vanilla to this then add remaining sugar slowly beat until light and creamy add sifted dry ingredients then start adding milk slowly.. fold in beaten egg whites fold in berries NOTE.. TAKE A BIT OF FLOUR PUT IN BERRIES AND STIR SO THEY DON'T SETTLE TO THE BOTTOM. use an 8x8 pan use spray or butter to coat pan pour batter into pan sprinkle sugar on top lightly bake @350 for 50-60 or until golden brown everyone oven temp is different.. Serves eight with a good helping...
