LEVAIN BAKERY’S CHOCOLATE CHIP WALNUT COOKIE COPYCAT
YSG Kitcheneria recreates the most famous Chocolate Chip Walnut Cookie in the world. No need to travel to New York City to have a taste of this one of a kind treat. You can now make it in the comfort of your own home.
RECIPE:
200g unsalted butter, cold
100g light brown sugar
100g white sugar
2 eggs
200g all purpose flour
120g cake flour
1 tsp cornstarch
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
250g semisweet chocolate chips
200g walnuts
US MEASUREMENT:
7/8 cup cold butter, cubed
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 3/4 cup all purpose flour
1 cup cake flour
1 tsp. cornstarch
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 cups semisweet chocolate chips
1 3/4 cup walnuts
* NOTE: CAKE FLOUR SUBSTITUTE:
For every 1 cup of all purpose flour, remove 2 Tbsp then add 2 Tbsp of cornstarch. You now have 1 cup of cake flour.

This recipe only makes 6 cookies, so it’s perfect if you want a quick mid-week treat OR you can double (or octuple) the recipe for more ❤️
INGREDIENTS:
- 80g Coconut Sugar
- 2 tbsp Olive Oil
- 1 tsp Vanilla Extract
- 2 tbsp Milk
- 80g Plain Wholemeal Flour
- 60g Oat Flour (blended oats)
- 1/2 tsp Bicarbonate of Soda
- 1/4 tsp Salt
- 30g Dark Chocolate
- 20g Walnuts
METHOD:
1. Preheat oven to 190°C / 375°F / 170°C fan.
2. Add wet ingredients to a bowl and whisk until smooth.
3. Fold in dry ingredients until almost combined.
4. Roughly chop chocolate and walnuts (I like em chunky) and fold them in.
5. Roll the dough into 6 balls (if the mixture is too sticky, pop in the freezer for 5 minutes).
6. Place the cookie dough balls on a baking tray and bake for 10 minutes. You can flatten them with a spatula once baked. Top with flaky sea salt.

Ghirardelli Double Chocolate Chunk Walnut Vegan Cookies
This tasty treat can satisfy any chocolate lover and they are vegan.
Ingredients:
WET
1 tbsp ground flax mixed with 3 tablespoons water
1/4 cup unmelted coconut oil
1/4 cup almond butter
1/3 cup brown sugar
1/3 cup cane sugar
1 tsp vanilla extract
DRY:
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp fine sea salt
3 tbsp good cocoa powder
1.5 cups rolled oats, processed into flour (or 1.5 cups oat flour)
1-2 teaspoons non-dairy milk (only if needed to moisten batter)
113 grams finely chopped dark ghirardelli chocolate bar
Directions:
Preheat oven to 350F and line a large baking sheet with parchment paper.
In a small mixing bowl, stir the flaxseed and water together and set aside for a few minutes so it can thicken up.
Add the coconut oil, almond butter, brown sugar, cane sugar, vanilla and flaxseed mixture to large bowl and blend until smooth.
Now blend in the dry ingredients, baking soda, baking powder, salt, cocoa powder, oat flour (buy it or make your own).
If your dough is a bit dry, add a teaspoon (or two) of almond milk and beat the mixture again.
The dough should be moist enough to form balls without cracking, but not super sticky.
Finely chop the chocolate.
Stir the chocolate into the batter by hand.
Shape in golf balls sizes of dough and place on the baking sheet 2-3 inches apart.
Gently press down on each ball with your hand to form a disc.
Bake for 13 minutes.
Cool cookies on the baking rack for 10-15 minutes.

CHOCO-NUT COOKIES RECIPE! - Kid Approved!
CHOCO-NUT COOKIES – 1-Minute Video! – This super-easy cookie recipe will make a lot of people happy, especially the wee ones. We suggest you double the recipe and then, keep them on hand for whenever you need a quick snack or special treat.
Choco-Nut Cookies are the best!
INGREDIENTS
1 C of raw cashews, toasted and finely chopped
1/3 C of ground almonds
½ teaspoon of ground cinnamon
¼ teaspoon of kosher salt
½ C of butter, softened
3/4 C of brown sugar
1 egg yolk
1 teaspoon on pure vanilla extract
1 C of dark chocolate chunks
INSTRUCTIONS
Preheat the oven to 350°F. Toast and then cool the cashews. Pulse them in a food processor to roughly chop. Toss with ground almonds, cinnamon, chocolate chips and salt. Beat butter and sugar together until light. Add egg followed by vanilla and beat well. Stir in nut mixture until well blended. Drop by small spoonfuls onto a parchment-lined baking sheet. Transfer to oven and bake for about 12 minutes, or until golden brown.
Cool 1 minute on the baking sheet, then transfer to a cooling rack and cool completely.
