How To make Dill Beans
4 pounds green beans
1 teaspoon cayenne pepper
3 1/2 teaspoons whole mustard seed
7 heaeds fresh dill
7 cloves garlic
5 cups cider vinegar
5 cups water
1/2 cup pickling salt
Clean beans thoroughly; drain and pack into 7 sterilized pint jars. Into each jar, put 1/8 teaspoon cayenne pepper, 1/2 teaspoon mustard seed, 1 head dill, and 1 clove garlic. Combine vinegar, water, and salt; bring to a boil; Pour boiling liquid over beans, leaving 1/2 inch headspace. Wipe rims with a damp cloth. Remove air bubbles. Seal according to lid manufacturer's instructions. Process in a boiling water bath for 10 minutes. Make 7 pints. Source: Miriam B. Loo's Home Canning Guide.

4 cups of water or broth ------ you can reduce the amount of water to 3 /1/2 cup if you want more stiff rice ! my kids like it a little soft !

*Bobby Joe shows us his 15 inch Fortex beans he uses for Lois' famous Pickled Beans recipe. Simple and easy!*
Makes 3 Quarts
3½ cups vinegar
2 cups sugar
2 sticks cinnamon
1 tablespoon pickling spice
1/2 teaspoon canning salt
3½ cups water
Boil beans for 15 minutes, then let simmer. Stuff beans in steralized quart jars as tight as possible. Make liquid out of rest of ingredients by bringing to a boil until combined and sugar dissolved. Pour liquid over beans leaving 1/2-1-inch headspace. Wipe top of jars and hand-tighten lids. Hot bath for 15 minutes. Will be ready to eat right away. Refrigerate after opening.

Dilly Beans! Pickling and Canning 2 Bushels of Green Beans
I was gifted 2 cases/bushels of green beans. I this video, we pickle some Dilly Beans and can the rest. Dilly beans are a fantastic crunchy dilly and slightly spicy treat that goes great with appetizers or in a Bloody Mary!
Dilly Beans - makes 4 pints
2 lbs fresh green beans
4 cloves garlic
4 sprigs fresh dill
1 t red pepper flakes
2 T coarse salt
4 c white vinegar
4 c water
Trim beans to fit jars. Add 1 clove garlic, 1 sprig dill and 1 t red pepper flakes to a sterilized pint jar. Fill jars with beans. Place lids in boiling water for a few minutes. Bring salt, vinegar and water to a boil. Fill jars with brine. Wipe edges of pars clean. Place lids and rings on pars and screw down snuggly. As long as lids and brine are hot, the jars should seal. Let stand for a minimum of 2 weeks before eating. Store any jars that did not seal in the fridge.
