How To make Dietetic Melt Away Mints
1 1/2 lb Finely chopped milkcote
-chocolate coating 2/3 c Melted vegetable shortening
3 Or 4 drops pepermint oil
Milkcote chocolate In the top of a double boiler, melt milkcote coating over hot, not boiling, water. Add shortening and pepermint, a little at a time, beating well after each addition. Chill chocolate mixture in the refrigerator until of a soft custard consistency. Place in a mixing bowl and beat for 30 seconds. DO NOT OVERBEAT. Pour into a waxed paper-lined 10 x 13-inch pan. Cover with waxed paper and tap pan to level mixture. Place in refrigerator until firm but not hard. Cut into squares. Dip in melted and cooled milkcote coating. Makes about 100 pieces. A common symptom of the Keto Diet is bad breath and here we provide an easy and refreshing solution. It tastes very much like a spearmint tic tac, and you can store it in the pantry.
*Please note Xylitol is poisonous to animals and especially cats are attracted to peppermint, so store out of reach of pets.
Also limit to about 3 a day (3 grams). For some people, high amounts of xylitol can kick you out of ketosis, this is just meant to be a quick fix to bad breath when you can't get to your toothbrush. Also xylitol can cause diarrhoea so use sparingly.

Ingredients:

1 tsp Peppermint Extract

Flourless Moist Chocolate Cake / Gluten Free / No Flour
Flourless Chocolate Cake (pan size 38 x 26 cm or 15 x 10 in)
1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml
120g dark chocolate (1 cup)
30g unsalted butter (2 tbsp)
30ml milk (2 tbsp)
4 egg whites
a pinch of salt
50g sugar (4 tbsp)
4 egg yolks
1 tsp vanilla extract (5ml)
Bake at 170C for about 20 minutes
Chocolate Cream Filling
150g dak chocolate (1 cup + 2 tbsp chopped chocolate)
90g heavy cream (1/3 cup)
300g cold heavy cream (1 1/4 cup)
30g sugar (2.5 tbsp)
Cocoa Syrup
75ml hot water (1/3 cup)
1 tbsp cocoa powder (7g)
2 tbsp sugar (25g)
Mix to dissolve and let it cool down completely
Chocolate Glaze
50g cocoa powder (1/2 cup)
115g sugar (1/2 cup + 1 tbsp)
85ml water (1/3 cup)
85g heavy cream (1/3 cup)
1 tbsp gelatine powder (9g)
3 tbsp cold water to bloom gelatine (45ml)
