How To make Diabetic Sugar Free Apple Pie
6 oz (1 cn) frozen apple juice;
2 tb Rounded all purpose flour
1 ts Cinnamon
1/4 ts Salt
5 To 7 apples
1 tb Butter or margarine
Nutmeg (optional) 1 9" double-crust pie shell; u
In a small saucepan, combine the frozen apple juice, flour, cinnamon and salt. Stir constantly over medium heat until the mixture is thick and bubbly, 3 to 5 minutes. Peel and slice the apples and stir them into the apple juice mixture. Pour the mixture into the unbaked pie shell and dot with butter. Position the top crust over the filling, cutting slits for the steam to escape. Trim and seal the edges. Brush the top very lightly with water and sprinkle with nutmeg if desired. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake for 30 minutes more. Print the Recipe:
Ingredients
10 apples, peered, cored, and sliced
4 oz (114 g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
Instructions
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Notes
If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice.

Today's Tasty Tuesday recipe is a cheater's pie. Cheaters? Yes. I hate to cook... seriously. So I have learned tricks to get me out of the kitchen in a hurry. Before I found out that I was diabetic, I never realized how many no sugar added items were out there. This is just one of them. Believe it or not, this really does taste like homemade and takes almost no time to make. Happy Creating everyone!

WHY I AM VEGAN- MY STORY -
Sugarfree Apple Pie Recipe
I wanted to create an apple pie recipe without sugar and less all-purpose flour for a long time :) I finally had time to experiment and create this Sugarfree Apple Pie Recipe :)
You will need:
Around 1kg of apples (7-8 big apples)
1 quince (optional)
150g butter (2/3 cup)
150g all-purpose flour (1 cup)
100g chopped walnuts (1 cup)
100g almond flour (1 cup)
Pinch of salt
1 tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp clove
1/2 tsp allspice
A bit of ginger
2 tbsp erythritol
Liquid sweetener, I used Stevia
1-2 tbsp cold water
4tsp potato starch
Start by mixing the dry ingredients. Add the butter, make sure that it's cold. I let mine out for too long and my crust is not as flaky as I wanted it to be. Incorporate the butter into the dry ingredients, don't overwork the dough. Add cold water and liquid sweetener, combine. Leave in the fridge while you work on your filling.
Peel the apples and cut them into pieces. Leave two to grate.
Grate the quince as well. Adding a quince is optional :)
Transfer the grated apples and quince to a pan, set the temperature to medium heat. Add erythritol and cook on medium heat until soft. Add the liquid sweetener and the spices, mix. Add about half a glass of water and cook down to a sauce. Add sliced apples and cook on medium heat until soft. Add starch of your choosing, I used potato starch but you can use tapioca, corn, whichever you have :) You can substitute with all-purpose or rice flour.
Once the apples are soft set aside to cool.
Take the dough out of the fridge and it warm up to room temperature. Split in half.
Roll out the dough for the bottom crust and transfer to a pie pan.
I use a 27cm (10inch) pan.
Put the pan with the dough into the fridge.
Roll out the dough for the top crust/decorations and have fun with it :)
Pour the filling in (make sure it's cooled down).
Decorate :)
Bake at 190C (375F) for 30-35 mins
