Mince and onion pie
My Nan used to make this when we were children, I loved it with mushy peas and crinkle cut chips ???? ????
This is my take on mince and onion pie, with an added twist to the gravy. Each time I make gravy there is always bits and pieces of all sorts in, whatever I've got it the cupboard, just put it in ????
Here is the recipe I use:
Pastry:
450g Plain Flour
100g Lard
100g Margarine
Pinch of Salt
Cold water to bind together.
Method:
Rub together the flour, lard and margarine until it resembles fine breadcrumbs. Add the cold water a tablespoon at a time until it binds together into a soft pliable dough. Cover in cling film and refrigerator for about half an hour.
Mince my way:
500g lean mince beef
1 Onion finely chopped
500ml beef stock then add a splash of what takes your fancy, I use anything from soy sauce, brown sauce, oyster sauce, ketchup, sweet chilli sauce (a must really) hoisin sauce etc, etc
Method:
Fry the onion in a bit of oil until soft, add the mince and fry until brown. Add the stock and other sauces. Simmer for around half an hour.
To build the pie. Half the pastry, line an old plate or pie dish with one half of the pastry, fill your pie with the cold mince then top it of with the other half of the pastry. Brush with milk for a golden brown topping. Oven bake on 180C for about half an hour until golden brown. Serve with potatoes and vegetables ????

Bison Potato Casserole
Diabetes Friendly Recipe from Nutrition Department of Oneida Community Health Center:
Bison Potato Casserole
1lb . ground bison
1T. olive oil
1 med. onion, chopped
1/2c. celery, chopped
1 clove garlic, minced
1/2 tsp. pepper
10 baby red potatoes, quartered
1c. frozen corn
1 (10 1/4-oz.) can reduced-sodium, fat-free cream of mushroom soup
1/2c. fat-free sour cream
2c. reduced-fat cheddar cheese, shredded
In a large skilled brown ground bison with oil, onion, celery, garlic and pepper. Drain and place in a 13 x 9-inch baking pan. Add the potatoes, corn, cream soup, milk, and sour cream. Cover with aluminum foil and bake at 375 fro 60-minutes. Uncover and sprinkle with cheese. Return to oven for 10 minutes, until the cheese is golden brown.
Makes 12 serving, serving size: 1/12, calories: 180, 180 fat: 9g, sodium 310mg, carbohydrates: 11g.
