1 Cup brown sugar
1 Cup chocolate
shaved
1 Cup milk
1 Cup brown sugar
1/2 Cup butter
3 egg yolks
1/2 Cup milk
2 Cups flour
1 Teaspoon vanilla
2 Teaspoons baking powder
3 egg whites :
whipped with salt
salt FILLING 2 Cups brown sugar
1/2 Cup butter
1/2 Cup milk
1 Teaspoon vanilla
Part 1- mix together the brown sugar, chocolate and 1 cup milk in pan. Let com e to boil, stirring until thick. Remove from heat and cool. Part II - Cream brown sugar, butter, egg yolks until very light. Add milk, fl our, vanilla, baking powder and mix. Mix this with Part 1 and then with egg whites which have been whipped with a pi nch of salt. Bake at 350 degrees .
Filling- place all filling ingredients except vanilla in pan and cook to soft ball stage. Add vanilla. Beat until cool.

Devil food mini-bundt cakes!
Devil food mini bundt cake- we were craving a delicious devil food cake and wanted to try out our new mini bundt pan so we made devil food bundt cakes with chocolate ganache.
1 3⁄4 cups boiling water
6 ounces semisweet chocolate
1cup unsweetened cocoa powder
2cups sifted cake flour
2tsp baking soda
1⁄4 tsp salt
1 3⁄4 cups brown sugar
4 large eggs
2 tsp vanilla extract
17 tbsp margarine equals to 10 oz
Preheat the oven to 350 degrees . Use baking spray on mini bundt pans and set aside
In a medium bowl, pour the boiling water over the 6 oz. of semisweet chocolate. Set aside for a few minutes. Once the chocolate is thoroughly melted, add the cocoa and stir until smooth. Set aside to cool to room temperature.
In a small bowl, whisk together the flour, baking soda, and salt. In a large bowl with an electric mixer, cream the butter and brown sugar. Add eggs one at a time beating well after each addition. Beat in the vanilla. Add the flour mixture and half of the chocolate mixture. Beat on low speed to combine, and then on high for 1 1/2 minutes. Add the remaining chocolate mixture and beat till combined.
Pour the batter into the prepared cake pans and bake for 20-25 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pans for 20 minutes before removing (or they will fall apart). Invert the cakes onto wire racks to cool completely before assembling and frosting. Serve delicious y'all
Ganache-
12 oz bag milk chocolate chips
6 oz heavy cream
Bring heavy cream to a boil and remove from heat.
With chocolate chips in a heat safe bowl, pour cream over chips and slowly stir until all chips are melted.
You can use ganache immediately or let sit to thicken.

Black Midnight Devil’s Food Cake
This is more for fun for the family. Guest Chefs Grandma, Celeste and Michi. Excuse the lenghty descriptions, but great to see the family getting together to make my favorite cake that my grandmother used to make.
Black Midnight Devil’s Food Cake & Icing
Cake
¾ cup shortening
1 ¾ cup sugar
3 large eggs
¾ cup cocoa
1 ½ cup hot water
2 ¼ cup flour
¾ teaspoon salt
1 ½ teaspoon baking soda
¾ teaspoon baking powder
1 ½ teaspoon vanilla
Grease and flour 2 – 8” layer pans.
Combine flour, salt, baking soda, and baking powder – set aside.
Combine cocoa and hot water and stir to dissolve completely.
Cream shortening and sugar thoroughly.
Add eggs one at a time, beating until light and fluffy after each one.
Add dissolved cocoa mixture to creamed mixture alternately with sifted flour, salt,
soda, and baking powder.
Stir after each addition just enough to make a smooth batter. Don’t over mix.
Bake at 350 0 for 30 to 35 minutes.
Icing
1/3 cup oleo
4 ½ cup confectionary Sugar
¼ cup milk – more if needed
1 ½ t vanilla
½ cup cocoa
Beat oleo till fluffy.
Gradually add cocoa and 2 cups of sugar.
Beat well. Slowly beat in vanilla and ¼ cup milk.
Slowly beat in remaining sugar.
Beat in additional milk if needed.
Frosts 8” or 9” cake
