Carrot Icebox Cake

Makes one 9-inch cake
Must Have
Cake
18 carrots, peeled and chopped
9 Medjool dates, pitted and soaked for 20 minutes
1/2 cup raisins
1/2 cup chopped raw walnuts
1 teaspoon cinnamon powder
1/2 teaspoon ginger powder
Icing
2 cups cashews, soaked for 20 minutes
7 Medjool dates, pitted and soaked for 20 minutes
1 cup coconut water
1/2-inch vanilla bean
Toppings
Shredded unsweetened coconut
Chopped pistachios
Must Do
1. Line a 9-inch springform pan with parchment paper.
2. To make the cake: Add the carrots and dates to a food processor and pulse until smooth.
3. Add the raisins and walnuts and pulse until combined. Add the cinnamon and ginger and pulse to incorporate.
4. To make the icing: add the cashews, dates and coconut water to a high-speed blender and blend until smooth.
5. With a paring knife cut a slit in the vanilla bean in the middle, scrape out the vanilla beans and add to the icing. Pulse to incorporate.
6. To assemble the icebox cake: spread 1/2 the carrot mixture to the bottom of the prepared pan.
7. Top the carrot layer with 1/2 the icing.
8. Add another carrot layer and top again with remaining icing.
9. Top with the coconut and pistachios.
10. Freeze for 2 hours or overnight and serve.

Cinnamon - 1tsp
Egg - 3
Vanilla sugar - 1tbsp
Brown sugar - 180g
Oil - 150ml
Milk - 3tbsp
Grated carrots - 250g
Topping:
Cream cheese - 200g
Vanilla sugar - 2tbsp
Walnuts

2 cups all purpose flour
1 tsp cinnamon
1/4 tsp nutmeg
1 tbsp vanilla
2 cups shredded carrot

10 inch pan
2 eggs
1/2 tbspn almond flavoring
1/2 cup granulated sugar
1/2 cup vegetable oil
2 teaspoon vanilla flavoring
1.5 cups flour
1/2 teaspoon salt
1/2 tbspn baking powder
1 tbspn cinnamon
Dash all spice
1/2 cup water
Cream cheese frosting ????

Kue ini kurang populer di Indonesia dibanding chiffon cake ataupun kue kue lain yang lembut2 gitu. Padahal sebenarnya kue ini tuh lezat loh, trus udah sekalian makan sayuran,seratnya cukup tinggi kan ya jadinya. CARROT YANG SUPER WANGI karena kaya akan rasa dan aroma rempah: kayu manis, cengkeh,pala, kapulaga dan vanilla, raisin dan kenari,MAKIN endul bingit dipadukan dengan krim keju icing yang lembut dan manis..yumeh deh pokoknya. Kalo blm pernah, resep ini worthed banget untuk kalian cobain. Saya lupa tunjukkan di video ini kalau saya pakai sejumput garam. jadi jangan kaget kalau diresep saya tulis sejumput garam yah..Soal menghias kue, udah deh maap aja yakk hahahha, lain kali eike berusaha lebih baik..haahhaha lagi...PENTING; KUE INI JAUH AKAN LEBIH BAIK DIMAKAN SETELAH DISIMPAN SEMALAMAN, RASANYA SUDAH LEBIH MENYATU, ICINGNYA MAKIN MEMBUAT CAKE INI LEBIH LEMBAB..TRUST ME..

1 1/4 gelas terigu protein rendah or sedang

1/2 gelas kismis atau raisin
1/2 gelas kenari
2 butir telur ayam
1/2 gelas gula pasir
1/4 gelas gula aren
3/4 gelas minyak sayur
1 sdt PASTA VANILLA MBAJING
1 sdt bubuk kayu manis
1 sdt bubuk spekuk
12 parutan pala
sejumput garam
Bahan Icing krim keju
70 gram cream cheese
40 gr butter
1/2 sdt Pasta Vanilla mBajing
1/4 sdt kayu manis bubuk
