Add potatoes, carrots, onions, and the garlic last to the same pot and brown them. Return chicken to the pot. Deglaze with the white wine vinegar Then add chicken broth, tomatoes, bell peppers, and spices. Bring to a boil and simmer for an hour.
*Recaito*
Recaito is normally used as the starting base of making Puerto Rican soups, meats, stews, beans, and rice dishes. In Puerto Rican homes they make this and keep it in a jar in the fridge because they use it daily in cooking. I don't use it all the time so I freeze it. 3 medium green bell peppers, seeded, chopped 3 medium onions, peeled, chopped 1 bunch culantro chopped 6 small ajíes dulces, or sweet green chile peppers chopped 1 head garlic, peeled, chopped
Blend all the ingredients in a a blender, add a small amount of olive oil to make it creamy like a smoothie. I then pour this into ice cube trays and freeze then add them to freezer bags for when I need them.
