How To make Dandelion Jelly
1 qt Dandelion blossoms
2 qt Water
2 tb Fresh lemon juice
1 3/4 oz Powdered fruit pectin
5 1/2 c Sugar
Pick bright, fresh dandelion blossoms and pack the quart container pretty tightly. This is going to require a lot of dandelion blossoms! Rinse quickly in cold water to remove any insects/dirt on the petals. Don't leave the blossoms in the water for very long though, as they will be a little the worse for wear. Next, pull up a chair somewhere comfortable, as this part is going to take awhile...Snip off the stem and green collar under each blossom, so that only the petals are left. This takes about four hours! In an enamel saucepan, boil the dandelion petals in water for 3 minutes, or a little longer, until the water takes on their color. (I boiled the petals for 4 minutes until I liked the color better.) Cool and strain, pressing against the petals with your fingers to extract all of the dandelion juice. (Or you can cheat and line a sieve with moistened cheesecloth and strain it that way.) Measure out 3 cups of dandelion liquid. Add the lemon juice and fruit pectin. Stir to combine. Bring to a boil, using a large kettle. Add the sugar, stirring to mix well. Continue stirring and boil the mixture for 2 and 1/2 minutes. Pour into hot sterilized jelly jars and seal. Process for five minutes in a boiling water bath. Yield: Five 1/2 pint jars.

Wild Edibles- How to make Dandelion Jelly
You know its officially spring in Idaho when these little weeds start popping up everywhere. They are the first food for bees in the spring. Most people go to extreme links to eradicate these weeds, but did you know that they are edible? All parts of the Dandelion plant are edible, from the flowers to the roots and they are full of vitamin A, C, and K. They help relieve allergies and they taste so good! At our homestead, spring is usually the time that we are starting to get low on our supply of jams and jellies so its nice to be able to can jelly early in the season and start getting that supply built back up. In this video we are going to be foraging for Dandelions to make a delicious jelly. A Jelly that tastes like honey! Almost too good to be true. Its no wonder bees like those little flowers so much. Dandelion jelly recipe is below.
DANDELION JELLY
1 Quarts dandelion “fluff” (you need a lot more than 1 quart of whole flowers)
2 Quarts boiling water
2 Tablespoon lemon juice
6-7 Tablespoons pectin
4 cups sugar
To prepare flowers:
Pick dandelion flowers and remove as much green as possible. You want just the yellow “fluff”
1. 1 Quarts packed dandelion fluff (green bulbs removed)
2. Boil 2 Quarts water
3. Pour boiling water over dandelion fluff.
4. Let sit 12-24 hours
5. Drain off liquid and keep dandelion juice
To Make Jelly
1. Measure 4 cups liquid from dandelions and add to a large pot
2. Add in 2 T lemon juice
3. Add 6 T pectin (for a thicker jelly add an additional 1 T pectin)
4. Stir and then bring to a boil
5. Add in 4 cups of sugar
6. You can add in 1 tsp butter to help control foaming
7. Bring to a boil and boil 3 minutes stirring constantly
8. Pour into hot sterilized jars. Close jars with sterilized lids and rings
9. Put into a water bath for 10 minutes
10. Take out and let cool
If any jars do not seal put them in the fridge
