How To make Dandelion Jelly
1 qt Dandelion blossoms
2 qt Water
2 tb Fresh lemon juice
1 3/4 oz Powdered fruit pectin
5 1/2 c Sugar
Pick bright, fresh dandelion blossoms and pack the quart container pretty tightly. This is going to require a lot of dandelion blossoms! Rinse quickly in cold water to remove any insects/dirt on the petals. Don't leave the blossoms in the water for very long though, as they will be a little the worse for wear. Next, pull up a chair somewhere comfortable, as this part is going to take awhile...Snip off the stem and green collar under each blossom, so that only the petals are left. This takes about four hours! In an enamel saucepan, boil the dandelion petals in water for 3 minutes, or a little longer, until the water takes on their color. (I boiled the petals for 4 minutes until I liked the color better.) Cool and strain, pressing against the petals with your fingers to extract all of the dandelion juice. (Or you can cheat and line a sieve with moistened cheesecloth and strain it that way.) Measure out 3 cups of dandelion liquid. Add the lemon juice and fruit pectin. Stir to combine. Bring to a boil, using a large kettle. Add the sugar, stirring to mix well. Continue stirring and boil the mixture for 2 and 1/2 minutes. Pour into hot sterilized jelly jars and seal. Process for five minutes in a boiling water bath. Yield: Five 1/2 pint jars.

We show you the easy old fashioned way how to make and can dandelion jelly. It's very easy to make but it is time consuming. You just have to pick the flowers, remove the green, and make dandelion tea. Once you have the tea, it is easy to make dandelion jelly and can it in mason jars using the open kettle method with NO WATERBATH. Enjoy the bounty of spring dandelions even during the winter!
We use this jelly on homemade southern biscuits and toast for breakfast. Dandelion jelly has the taste of honey and is perfect for breakfast on cool spring mornings.
Making jelly is a big part of the summer at most homesteads. Dandelion jelly signals the start of spring and the canning season. Eating this wild flower jelly is a pleasure.

Dandelion Jelly:
Gather 4 heaping cups of dandelion blossoms. Just the yellow part of the flower.
Cover with 4 cups of boiling water and let sit overnight.
Strain through sieve and coffee filter to measure 4 cups. Add up to 1/2 cup of boiling water to measure the full amount.
Pour into large stock pot, along with 8 cups of sugar and 1/2 cup of lemon juice. Stir well, bringing to full rolling boil for 2 min.
Add 2 envelopes of liquid Certo and continue boiling for 2 more minutes.
Pour into sterilized jars, seal, and process in hot water bath for 10 min.

How to Make Dandelion Jelly - Retro Time Machine
Spring has sprung here on the Retro Time Machine and with all the blooming flowers I decided to do another flower jelly recipe using dandelions !
this is the recipe in the video but you can easily half this batch!
8 cups of dandelion petals
(a quart sized zip lock of flowers - keep cool till ready to clean - I put mine in the refrigerator)
6 cups of boiling water
6 cups of sugar
2 boxes of pectin
1 lemon
1 tbsp of vanilla
Canning jars
Fine mesh strainer
