How To make Curried Stew
Stephen Ceideburg 2 tb Peanut or other vegetable
-oil 1 1/3 lb Bottom round steak, cut into
-1/2-inch cubes 1/2 lg Onion, finely chopped
2 lg Tomatoes, cored, chopped
1/2 ts Salt
1 ts Strong sweet curry powder,
-or to taste Red pepper flakes Heat the oil in a skillet; add meat cubes and sear, turning to brown on all sides . Add onion and tomatoes. Cook over high heat until tomatoes release their juices. Add salt and curry powder and simmer until meat is tender. Add water if stew gets so dry it might burn. Place pepper flakes in a small bowl and pass at the table. Serves 4. PER SERVING: 200 calories, 18 g protein, 7 g carbohydrate, 12 g fat (3 g saturated), 45 mg cholesterol 320 mg sodium, 2 g fiber. Chicken Ishtu Ingredients -
For the Stew
2 tbsp Oil
2 green Cardamoms
3 Cloves
1-inch Cinnamon Stick
1-inch Ginger (julienne)
3 Green Chillies
1 Carrot (chopped)
2 tbsp Green Peas
1 Potato (diced)
250 gm Chicken (boneless)
1 Coconut Milk (Thin)
Salt (as required)
⅛ tsp Garam Masala Powder
¼ tsp Black Pepper Powder
½ cup Coconut Milk (Thick)
For the Tempering
2-3 tbsp Coconut Oil
1 tsp Mustard Seeds
1 sprig Curry Leaves
½ cup Pearl Onions (sliced)

???? Simplified Japanese Curry Recipe
400g minced beef
1 large onion, sliced
2 Tbsp all purpose flour
750g mild dashi stock
1/4 cup mirin (or apple juice)
1/4 cup light soy sauce
2 Tbsp Curry powder (or to taste)
2 Tbsp dark soy sauce (optional)
500g small potatoes, halved
3-4 carrots, in chunks
about 200g (2 handfuls) frozen green peas
2-3 green onions, sliced

Ingredients for Chicken Stew:

Chicken, curry cut pieces with bones- 500 gms
For marination:
- Salt-3/4 tsp
- Crushed pepper- 1/2 tsp
- Onions, fine chopped- 2 nos.
- Dried red chilli, chopped- 1 no.
- Green chillies, chopped- 2 nos.
- Ginger garlic paste- 2 tsp
- Tomatoes, chopped- 2 medium
- Potatoes, diced- 2 medium
- Coconut milk- 200 ml
- Salt- 1/4 tsp
- Pepper powder- a pinch for seasoning
- Lemon juice- 1 tsp
- Coriander chopped- 2 tbsp
- Oil- 4 tbsp
Preparation:
- Marinate the chicken pieces with salt and crushed pepper. Set aside for 30 mins.
- Chop the onions, green chillies, dried red chillies, tomatoes and coriander leaves.
- Peel and dice the potatoes. Soak it in water to avoid darkening
- Prepare coconut milk or alternatively use store bought ready coconut milk.
Process:
- Heat oil in a kadai or pan and add chopped onions.
- Fry on medium heat for 3-4 mins till yellow (just soft) in color.
- Add the chopped green chillies & red chillies, mix & fry for a minute.
- Now add the ginger garlic paste, mix & fry for around 2 mins till the raw smell is gone.
- Add the marinated chicken pieces, mix well & fry on medium heat for around 5 mins till the chicken pieces are browned,
- Put in the diced potatoes & chopped tomatoes and mix well. Add in 1/4 tsp salt and mix it again.
- Cover & cook on low flame for around 3 mins till the tomatoes are soft.
- Now add in the coconut milk, mix well & cover and cook on low flame for around 15 mins or till chicken is soft.
- Once chicken is tender, season with a pinch of pepper and salt if required, add lemon juice & chopped coriander leaves.
- Mix well and simmer for a minute or two.
