Mutton Kathi Roll is a street-food dish originating from Kolkata, India. In its original form, it is a skewer-roasted kebab wrapped in a roti bread. So enjoy the delicious mutton kathi roll by leaning how to make them at home with chef Varun only on Get Curried.
Ingredients
For the dough
2 cups maida/ plain flour
1 tbsp ghee
1/2 tsp Salt
1/3 -1/2 cup Water
1 no egg
For the filling
250 gms boneless mutton
1 tbsp mustard oil
1 tbsp ginger garlic paste
1/2 tsp turmeric
1/2 tsp red chilli powder
1/2 tsp garam masala powder
Salt to taste
Water as required
For the assembly
1/2 cup onion sliced
2-3 green chillies chopped
1 cucumber thinly sliced
Lemon juice as required
Butter paper for wrapping
Method
- To make the roti bread add flour, salt, melted ghee, a egg and water and knead the dough.
- Apply some oil to the bowl and place the dough in it. Place a damp cloth on the dough and allow it to rest 15-20 minutes.
- In a pan heat raw mustard oil, until its smoking hot and then turn off the flame and keep it aside to cool down.
- Marinate the boneless mutton with ginger garlic paste, red chilli powder, garam masala powder, salt and turmeric.
- Heat the oil again and start adding onion, chopped chillies and mutton strips.
- Add little water and now lower the flames and cover it with lid and let it cook for 30- 40 minutes.
- Take the dough and start making the roti breads.
- First take a some dough and form small balls out of it
- Apply some oil to the board and roll the small dough balls into a flat disc.
- Dry roast the roti and flip it until it gets light brown ( half baked ) on both the sides
- Make the roti crisp by putting oil on the tawa and cooking the half baked roti again.
- With rolling pin press the roti so that is nice and crisp.
- In a bowl, break a egg, add salt and whisk it and place it on the top of roti and spread it properly and flip over the roti
- Place the meat on the roti conitnue placing the onions, cucumber , lemon juice, roughly cut chillies , salt and now roll the roti.
- Cut it right into the centre and roll it into butter paper
- Garnish with mint leaves and lemon wedges
- Mutton kathi rolls are ready to be served!

Keto Curried Chicken Sushi Hand Rolls
Dressing:
1/3 cup sour cream or creme fraiche or mayonnaise (75 g/ 2.7 oz)
2 cloves garlic, minced
2 tsp grated fresh ginger
1/2 tsp chili powder
1/2 tsp curry powder
1/4 tsp turmeric powder
1/2 tsp salt (I like Pink Himalayan)
freshly ground black pepper
Hand Rolls:
1 1/2 cups cooked chicken, shredded (210 g/ 7.4 oz)
1/4 cup freshly chopped chives or spring onion
4 nori seaweed sheets
4 large eggs
2 tbsp ghee or coconut oil (30 g/ 1.1 oz)
Instructions
Prepare the dressing by mixing all the ingredients: sour cream (or mayo for dairy-free), minced garlic, grated fresh ginger, chili powder, curry powder, turmeric, salt and pepper. Keto Curried Chicken Sushi Hand Rolls

Meanwhile, prepare the omelettes. Crack one egg at a time into a bowl and season with salt. Whisk briefly and pour in a hot pan greased with some ghee. Cook until the top is firm and opaque and then transfer into a plate. Repeat for the remaining three eggs and grease the pan slightly between each omelette. Ingredients:
Filling
1 1/2 tbsp Oil
1 1/2 tbsp Garlic (minced)
1 tbsp Ginger (minced)
1 tsp Chilli Flakes
Cabbage (shredded)
2 Carrots (shredded)
1/2 cup Spring onions (green)
200 gms Boneless Chicken (boiled shredded)
Salt
1 tsp Black Pepper Powder
Soy Sauce
1 tsp White Vinegar
Paste
2 tbsp All Purpose Flour (maida)
Water
Spring Roll Sheet (5 inches by 5 inches)
Oil
Method:
Prepare the Filling
In a large bowl, combine the Oil, Garlic (minced), Ginger (minced), cook till the smell evaporate. Now add Chilli Flakes, Cabbage (shredded), Carrots (shredded)
mix them all and add Spring onions (green), mix everything properly then add Boneless Chicken (boiled shredded). Now let it cool down for a minute before add any seasoning, once cool down add Salt, Black Pepper Powder, Soy Sauce & White Vinegar. Now mix them properly.Remove browned ground chicken from wok to a bowl and set aside.
For making Paste (which use for sticking the roll together) have All Purpose Flour in the bowl add Water, start with less water and then add according to your understanding.
Now for the Roll, use Ready-made Spring Roll Sheet, place the filling as shown in the video and make a roll using the paste also, put it aside and repeat the process with all the sheets.
Lets cook the rolls, for that heat up the Oil in Wok in high flame to later medium flame, Fry the rolls properly and now your Chicken Spring Rolls is ready to be served.

A popular street food in which juicy masala chicken is rolled up inside in a flaky and delicious parantha.
CHICKEN KATHI ROLL
Ingredients
250 grams boneless chicken breasts, cut into thin strips
Ready-made dough made using 1½ cups refined flour
2 tbsps mustard oil
1 tsp cumin seeds
1 large onion, finely chopped
1½ tbsps ginger-garlic paste
2 medium tomatoes, finely chopped
1 tbsp Tata Sampann Chicken Masala
Salt to taste
2 green chillies, chopped
3 tbsps tomato ketchup + to serve
2 tbsps chopped fresh coriander rleaves
Ghee for applying
Refined flour (maida) for dusting
8 tbsps oil
2 eggs, beaten
Pickle onion slices for topping
English cucumber slices for topping
Kasundi mustard to serve
Method
1. Heat mustard oil in a non-stick pan, add cumin seeds and let them change colour. Add onion and mix well. Cook till golden brown.
2. Add ginger-garlic paste and mix well. Cook for 1-2 minutes. Add tomatoes, mix well and cook for 2-3 minutes or till the tomatoes turn pulpy.
3. Add Tata Sampann Chicken Masala and salt and mix till well combined. Add ½ cup water and mix and cook for 3-4 minutes or till the oil separates.
4. Add chicken and green chillies and mix well. Cook for 10-15 minutes. Add tomato ketchup, mix and add chopped coriander and take the pan off the heat.
5. Dust the worktop with refined flour and place a portion of the dough, shape it into a ball and flatten it slightly and roll into a thin disc.
6. Apply ghee and dust a little flour on top. Make a cut from the centre point to one end and start rolling to make a cone. Press it gently and dust with a little flour and roll into a parantha.
7. For making one roll, heat 2 tbsps oil in another non-stick pan. Place the prepared parantha on it and cook for 1-2 minutes, flip and add ½ beaten egg and spread it slightly. Flip and cook for 1-2 minutes. Transfer on to a worktop.
8. Add a portion of the prepared chicken mixture in the centre. Sprinkle pickled onion slices and cucumber slices and tightly roll. Serve hot with tomato ketchup and kasundi mustard.

Ingredients for Chicken:
300 gms Boneless Chicken, cut in cubes
1 tbsp Oil
1 tsp Garlic Paste
1 tsp Black Pepper
1 tsp Salt
Ingredients for Bread Roll:
4-5 Bread slice
Water as required
1/4 cup Capsicum
1/4 cup Celery
Coriander leaves
1/4 cup Cheese, grated
Method of preparation for chicken:
In a pan heat oil, add garlic paste and once the raw smell of the garlic goes away add some pepper and chicken.
Saute the chicken till it cooks. Add salt, cover it with a lid and cook for 3-4 minutes.
After that cook the chicken for 3-4 minutes without the lid.
Method for Bread Roll:
Flatten a slice of bread with the help of a rolling pin.
Moist the bread with some water and roll it again.
Start adding our stuffing.
Add capsicum, celery, coriander leaves, cheese, and chicken.
Just fold the bread nice and tight. Take little water if required and keep it aside.
In a vessel containing hot oil fry the bread roll till they are nice and crisp.
Our Bread Rolls are nice and ready to serve.
