How To make Curried Beef
Ingredients

beef, round steak, or lean stewing beef, cut in 1 1/2 inch chunks

flour

raisins

apples, peeled, cored, sliced

broth, beef, can

apples, unpeeled, cored, finely chopped

rice, cooked, hot
Directions:
Wipe beef well. Mix flour and curry powder. Coat meat cubes with flour mixture. Place meat in crockpot. Add garlic, raisins, sliced apples, onion, salt and pepper. Pour in broth and stir to blend. Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours; until meat is tender.
Before serving, stir in additional curry powder to taste (up to 1 tablespoon) and chopped apples. Serve over hot fluffy rice.
Variation: 3 pounds cubed lean lamb may be substituted for the beef.
Serves 6 to 8.

Beef short rib curry | Short rib curry | Curried beef short ribs
Ingredients
- 1kg beef short ribs
- 3 tablespoons oil
- 1 medium onion, chopped
- 4cm piece cinnamon
- 3 cardamom pods
- 5 cloves
- 6cm piece lemongrass
- 1cm piece ginger
- 3 strips pandan leaf
- 8 garlic cloves
- 2 curry leaves sprigs
- 2 teaspoons chilli powder
- 1 teaspoon ground black pepper
- ½ teaspoon turmeric
- 1 ¾ cup water
- 2 tablespoons tamarind pulp
- 2 teaspoons Sri Lankan roasted curry powder (coming soon)
- 1 ½ cup coconut milk
- Salt to taste
Method
- Heat oil in a large pan over medium-low heat.
- Add onion and cook for 2 minutes.
- Add cinnamon, cardamom pods, cloves and lemongrass. Stir constantly while adding ingredients to prevent them from burning.
- Add ginger and pandan leaves followed by garlic and curry leaves. Onion should be translucent at this stage.
- Turn the heat to low. Add chilli powder, pepper, turmeric and give it a mix. Cook for about 30 seconds. Do not burn the spices.
- Add salt and give it a mix. Add about ¾ teaspoon of salt to begin with. You can always adjust the salt at the end.
- Add beef short ribs. Stir thoroughly to coat ribs with the tempered spice mix.
- Add water followed by tamarind pulp. You may need to add a bit more water if the meat attached to the ribs are too thick. More water you add, more gravy/curry sauce you get.
- Cover the pan with a lid and cook over low heat until the meat is tender. Check few times to make sure that the meat is not sticking to the pan. This will take about 45 minutes to 1 hour.
- Once the meat is tender, add roasted curry powder followed by coconut milk. Simmer over low heat for a further 10 minutes. Add salt if required.
- Serve with rice, roti or string hoppers (coming soon).

Notes:
- If you can't find pandan leaves, you can leave it out.
- Always adjust the chilli powder as per your choice.
- Tamarind can be replaced by lime juice. If you are using lime juice, make sure to add it after turning the heat off.
- Use any roasted curry powder you have in hand, but do not use un-roasted curry powder for this as the taste will be different.
- You can find spices in Asian grocery shops.
