How To make Crustless Cheddar Carrot Quiche
2 C. grated carrots
1 C. skim milk
4 eggs
2 Tbsp. chopped scallions
1/4 Tsp. salt
1/4 Tsp. ground ginger
1/8 Tsp. white pepper
4 Oz. grated Cheddar cheese
Preheat oven to 350 degrees. Place carrots in saucepan with about 1-inch cold water; bring to boil. Cover and remove from heat; set aside for 5 minutes, then drain thoroughly. Combine milk, eggs, scallions and seasoning until blended. Stir in cooked carrots and cheese. Spray a 9-inch quiche dish or pie plate with nonstick cooking spray. Pour carrot mixture into dish. Place dish in large baking pan and set on oven rack. Add hot water to baking pan to within 1/2-inch of top of quiche dish. Bake 30 to 35 minutes, until set. Makes 4 servings, 250 calories per serving.

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.

A simple vegetable crustless quiche
This video is about how I make my vegetable crustless quiche.
The ingredients below are enough to make a quiche to get 6 portions.
Ingredients: -
•12 large egg
•300g Cottage Cheese
•Mixed vegetables (Broccoli, Red Pepper, Garden Peas, Carrots and Sweetcorn)
•Tomatoes
•Mixed Herbs
•Ground Black Pepper
•Garlic Granules
Cooking Time and Temperature: -
40 minutes at Gas Mark 5 which is 190ºC or 375ºF
