How To make Crockpot Perfect Meatloaf
Ingredients

ground beef

egg, beaten
1/2
cup
bread crumbs
1/2
cup
tomato juice
3
tablespoon
onion, chopped
1
each
bell pepper, chopped in rings
3
tablespoon
celery, chopped
2
teaspoon
seasoned salt
1/4
teaspoon
thyme
1
ketchup or chili sauce
Directions:
Using a fork, mix all the ingredients, except the ketchup and pepper rings. Shape into a loaf and put into greased crockpot. Top with ketchup and pepper rings. Cover and cook on high for 1 hour, then on low 6 to 8 hours. Quartered potatoes coated with butter may also be cooked with this recipe. A dash of Paprika will give them a nice browned look. (Same cooking time)

You will adore this delish meatloaf recipe that you can create in your slow cooker. Just quickly assemble before you go to work, come home to perfectly cooked kiwiana – a meatloaf and veges. Even better, makes perfect sandwiches the next day. Gotta love mince.

In this video, I make a delicious slow cooker meatloaf that cooks in a tasty sauce made of ketchup, mustard, Worcestershire sauce and a touch of brown sugar.

I recommend cooking some sides to go with this meatloaf. Some roasted vegetables go great with this recipe, you can even cook them in the slow cooker if you want to.
Any leftovers are worth keeping as they will heat the next day nicely. I fried my leftovers the next day, and they were almost as good as when they were fresh.
You shouldn’t need any sauces to go with this dish as the one we pour over the meatloaf should be more than enough. If you’re worried, then you can always double the sauce ingredients.

Meatloaf
1kg (2.2 lb) ground beef
2 tsp. garlic crushed
2 eggs
1 onion, minced
½ Tbsp. oregano leaves
½ Tbsp. Parsley
½ cup milk
1 & ½ cups breadcrumbs
1 tsp. salt
¼ tsp. pepper
Sauce
½ cup ketchup
2 Tbsp brown sugar
1 Tbsp. Dijon mustard
1 tsp. Worcestershire sauce
I recommend using lean ground beef if possible as it will help reduce the amount of fluids produced throughout the long cooking time.
You can use some dried stuffing mix instead of plain breadcrumbs. The stuffing mix typically has more flavorings in it so you will have a much more flavor-packed meatloaf.
If the sauce doesn’t take your fancy, then you can leave it out of the recipe. However, I highly recommend that you do add it as it will add quite a bit of flavor to the overall meatloaf.

SLOW COOKER MEATLOAF
In this video I show you how to make a delicious moist meatloaf in your slow cooker. Many avoid meatloaf because sometimes it ends up dry and tough. With just a few simple tips, your next meatloaf will come out moist and tender. This slow cooker recipe is especially nice when you have a busy schedule. Just throw all the ingredients in the slow cooker and walk away.
Shopping List:
1 1/2 lbs. Ground chuck 80/20
1 small sweet onion, diced
1/2 green bell pepper, diced
1 piece white bread
1 tbsp. milk
1 egg, beaten
1/2 cup seasoned Italian bread crumbs
1 tbsp. each of garlic and onion powder
1 tbsp. Italian seasonings
1 pkg. Lipton onion soup mix
1 tbsp. Worcestershire
1 tsp. black pepper
1 tbsp. kosher salt
3 strips of raw bacon
Topping:
1 cup ketchup
2-3 tbsps. brown sugar
1 tbsp. yellow mustard
Directions:
Sauté the onion and green pepper with a sprinkle of salt in 2 tbsp oil over medium heat for about 5-7 minutes until soft. Set aside to cool.
Add the ground beef and egg to a bowl and add the seasonings. Using your hand mix gently to combine. Do not over work it or it will be tough to eat.
Form into a loaf shape and place in the fridge for 30 minutes.
Take out of the fridge and place in the slow cooker and top with the topping mixture with a sprinkle of parmesan cheese and parsley. Cover with strips of bacon to help keep the top moist and flavorful.
Cook on low 6-8 hours
