HOW TO MAKE SLOW COOKER MEATLOAF (GUARANTEED MOISTNESS)
Simple slow cooker meat loaf recipe with two tips on how to cook moist meatloaf everytime. I believe the key is the amount of breading to use. Using enough breading guaratees the juices remain in the meatloaf and not drain out into the bottom of your slow cooker. Another key is to soak the breading before adding it to your gound beef. Following these two tips will give you moist meatloaf everytime. I also show you how to make a delicious sweet glaze topping.
Shopping List:
1 lb chuck ground beef 80/20
1 small minced sweet onion or 1 tbs of dried minced onion
1 box of Stovetop Stuffing (6 oz) Savory Herb stuffing mix
¼ cup whole milk
½ cup milk for soaking the stovetop stuffing
1 large egg
¼ cup Worcestershire sauce
1 ½ tsp. kosher salt
¼ teaspoon course black pepper
2 tbs. glaze (see below)
Non-stick spray
Brown Sugar Glaze:
1 cup ketchup
¼ cup light brown sugar
1 Tablespoons finely minced onion
½ tsp. yellow mustard
¼ teaspoon black pepper
Directions:
In a bowl, add the glaze ingredients and mix. Set aside.
In another bowl, add the bag of Stovetop stuffing to ½ cup of milk and let soak for 15 minutes.
In another bowl, add the ground beef, milk-soaked stuffing mix, egg, milk and 2 tbs of the glaze. Gently mix together. Do not over work the mixture or it will be tough. Form the mixture into an oval shape. Place in the fridge for 1-2 hours to firm up before cooking. This is an optional step.
If you use slow cooker liners, place the liner in the crock pot first then add a piece of foil in the crock pot and form along the bottom and ends. Add some non-stick spray—this will assist in removing the meatloaf when it’s cooked. If you use a crock pot rack, place it in next.
Spread about 2 tbs of the glaze on the top of the meatloaf.
Cook on low for 4 ½-5 hours. The internal temp should reach 160 degrees for doneness.
When done, grab the ends of the foil and lift out. Place on a baking tray, cover in glaze and place under the broiler until it’s sticky and bubbly.
Let rest for 5-10 minutes.
Serve over mashed potatoes.

Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

CROCK POT MEAT LOAF, RICHARD IN THE KITCHEN
A great way to make meatloaf when you are pressed for time with other things to do. Prepare it up, place in the crock. Come back later and it's time to eat.
Shopping List:
1 1/2 lbs. Ground chuck 80/20
1 small sweet onion, diced
1/2 green bell pepper, diced
1 piece white bread
1 tbsp. milk
1 egg, beaten
1/2 cup seasoned Italian bread crumbs
1 tbsp. each of garlic and onion powder
1 tbsp. Italian seasonings
1 pkg. Lipton onion soup mix
1 tbsp. Worcestershire
1 tsp. black pepper
1 tbsp. kosher salt
Topping:
1 cup ketchup
2-3 tbsps. brown sugar
1 tbsp. yellow mustard
Directions:
Saute the onion and green pepper with a sprinkle of salt in 2 tbsp oil over medium heat for about 5 minutes until soft. Set aside to cool.
Add the ground beef and egg to a bowl and add the seasonings. Using your hand mix gently to combine. Do not over work it or it will be tough to eat.
Form into a loaf shape and place in the fridge for 30 minutes.
Take out of the fridge and place in the crock pot and top with the topping mixture with a sprinkle of parmesan cheese and parsley.
Cook on low 6-8 hours
