INGREDIENTS:
YIELD: Yield: 6 to 8 servings
1 tablespoon (15 ml) vegetable oil
6 pounds (3 kg) beef short ribs, fat trimmed
1 can (6 ounce 170 g) chipotle peppers in adobo sauce
4 cloves garlic, minced
4 ounces (115 g) tomato paste
1/4 cup (120 ml) fresh lime juice
2 tablespoons (30 ml) apple cider vinegar
1 tablespoon (7 g) ground cumin
1 tablespoon (18 g) salt
1/2 cup (240 ml) beef stock
1 large white onion, finely chopped
2 bay leaves
12 Homemade Tortillas
2 avocados, sliced
Pico de gallo
Sour cream
Cover and cook in slow cooker for 6 hours on HIGH or 10 hours on LOW, until the meat is falling off the bone.

Shopping List:
2-3 lbs Beef Short Ribs (Bone in or Boneless - boneless ribs will cook faster)
2 cups red wine (cabernet or merlot)
2 cups beef broth
1 tbsp beef base
1-2 tbsps dijon mustard
2 tbsps tomato paste
2-3 carrots
2-3 stalks of celery
1-2 onions
2 bay leaves
rosemary and thyme
1 tbsp worcestershire sauce
1 tbsp low sodium soy sauce
salt, pepper, garlic, onion powder
Slurry: 2-3 tbsps corn starch + 1/4 cup cold water
Directions:
Begin by salting your short ribs 2-24 hours prior to cooking (preferably overnight). Heat your skillet over high head and add 1 tbsp avocado oil. Sear short ribs in batches until golden brown on all sides. Once all short ribs are seared, remove them and set aside. Reduce heat and add the celery, carrots, and onion. Sweat the veggies for 3-5 minutes and season with salt, pepper, garlic, onion powder. Add tomato paste and dijon mustard and mix to combine. Deglaze with red wine and bring to a boil for 2-3 minutes. Add short ribs to your pressure cooker or instant pot. Add the veggies and wine from the skillet to the pressure cooker along with 2 cups of beef broth. Season again and add worcestershire and soy sauce. Add fresh herbs and set for high pressure 55 minutes. (If using the oven, cover in a baking dish or dutch oven and bake at 325 for 3.5 hours or until fork tender.

Short Ribs are rectangle cuts of beef that are about 2” by 4” in size and come from the chuck area of the cow. They consist of layers of meat and fat and contain the rib bone. They are different from Kalbi Short ribs, as those are crosscut and formally known as flanken cut. Because they are from a section of beef that traditionally renders tougher cuts of meat, it requires long, slow, moist-heat cooking.
Short ribs range in price from $8 - $10 per pound and occasionally can go on sale for $6 - $7 per pound, making it an inexpensive beef recipe. This is one of my all-time favorite dishes and is the perfect meal to serve to guests or for Sunday dinner with the family. In addition,

Super Easy Slow Cooker Ribs - Fall Off The Bone BBQ Ribs Recipe
How to make bbq ribs in the slow cooker? Search no more cos these ribs are so tender and deliciously slow cooked, they fall right off the bone.
INGREDIENTS
3 and 1/2 lbs Ribs
3 Tablespoon brown sugar
2 teaspoon chilli powder
2 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
salt and black pepper to taste
1 cup barbecue sauce
Brief Instruction
Ribs must be cut into equal halves to fit slow cooker
Remove membrane from ribs and pat dry with paper towel
Combine all spices and season both sides of ribs
Place 1 half of ribs into slow cooker then pour/spread with half of the barbecue sauce
Place the other half of ribs into the slow cooker then pour/spread with remaining bbq sauce
slow cook on low for 8 hours
