How To make Crockpot Chicken & Artichoke Casserole
Ingredients

pound
boiler-fryer chicken, cut up
1/2
teaspoon
white pepper
1/2
teaspoon
paprika
1
tablespoon
butter or margarine
1/2
cup
rich chicken broth
3
tablespoon
sherry
1/2
teaspoon
dried tarragon
1
each
can mushrooms
2
tablespoon
quick-cooking tapioca
2
each
jars marinated artichoke hearts
Directions:
Wash chicken. Pat dry with paper towels. Season with salt, white pepper, and paprika. Using a large frying pan, brown chicken in 1 tablespoon butter. Place mushrooms and drained artichoke hearts in bottom of crockpot. Sprinkle with quick-cooking tapioca. Add the browned chicken pieces. Pour in broth and sherry. Add tarragon. Cover crockpot and turn to Low heat setting. Cook for 7-8 hours OR cook on High for 5 hours.

3 lbs boneless skinless chicken breast- this is about 4-5 chicken breasts
2 tbsp olive oil
2 tbsp butter
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1 tsp pepper
½ tsp lemon pepper
½ onion- finely chopped medium
2 shallots
½ cup water
1 ½ cup cream
1 cup parmesan cheese
1 can Artichoke Hearts
4 cups Fresh Spinach (about 4 cups) coarsely chopped
1 tbsp better than bouillon

Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

Slow Cooker Crack Chicken
SLOW COOKER CRACK CHICKEN
Adapted from Cookie and Cups:
RECIPE:
INGREDIENTS:
2 lbs. boneless skinless chicken thighs (trim off excess fat if desired)
1 oz. packet ranch seasoning mix
16 oz. cream cheese
8 slices bacon (sliced, cooked and drained)
1 1/2 cups shredded cheddar cheese
1/2 cup sliced green onions
SLOW COOKER SIZE:
4 quart or larger
INSTRUCTIONS:
Add the chicken thighs to the slow cooker. Sprinkle over the ranch seasoning mix. Place the cream cheese on top of the chicken.
Cover and cook on LOW for 7 hours without opening the lid during the cooking time.
Shred the chicken with 2 forks right in the slow cooker. Stir the cream cheese and bacon into the shredded chicken. Spread out into an even layer. Sprinkle over the cheese. Cover for 10 more minutes to allow the cheese to melt.
Serve over rice and sprinkle over the green onions. Enjoy!
