cabbage, green, shredded

carrot, peeled, shredded

each
sauerkraut, (16 oz), drained, rinsed well
3/4
cup
apple cider
2
tablespoon
brown sugar
3/4
teaspoon
caraway seeds
1/2
teaspoon
allspice, ground
5
each
canadian bacon, slices, cut in strips
1/2
pound
turkey kielbasa, in 6 pieces
1
pound
potatoes, red, small, new, quartered
Directions:
Stir together the cabbage, carrot, sauerkraut, cider, sugar, caraway, and allspice in slow cooker. Bury the canadian bacon in the sauerkraut, pressing down to compact. Top with kielbasa & potatoes. Cover & cook on low for 7 hours, until potatoes are tender.

Sauerkraut has quite a unique taste and is indeed not for everyone. If you already know that you don’t like it, then I highly recommend swapping it for just plain cabbage. It won’t have the bitterness and flavors of sauerkraut but will still taste delicious.
Don’t worry about cooking any sides as this dish is perfect on its own. If you want to feed as many people as possible, then it goes great in some bread rolls. Without any extra sides, this dish will feed roughly four people.

800g (1.8 lb) polish sausage, sliced into 1-2 cm (0.5-1 inch) pieces
500g (1.1 lb) sauerkraut, drained
¼ cup brown sugar
1 onion, sliced
1 cup lager beer
There are a few variations that you can do to this dish. For example, you can use a different type of sausage. Something like a good Italian sausage will work well.
I recommend sticking to sauerkraut that you know and love. The flavor of the sauerkraut will impact the overall dish , so it’s essential that you choose something that tastes great for you.
You can use any type of beer that you want, but I do recommend that you stick to something that works for you. I recommend lager, but any other light beer will work great. I am not too sure that a heavy beer such as stout will work.

Today I’m sharing a classic New Year’s Day dish—Pork & Sauerkraut! Some say that because pigs “root forward,” the pork represents moving forward into the new year. Additionally the sauerkraut (fermented cabbage) represents increased wealth due to its green color. Whether or not you believe the superstition, this easy, flavorful, crockpot Pork & Sauerkraut is absolutely worth making. Happy New Year!

LOGAN FAMILY FARMS:
Pork & Sauerkraut
3 lb. boneless pork pot roast (or pork shoulder)
2 lb. bag of sauerkraut
2 gala apples
1 large sweet onion
salt, pepper, garlic powder
1 Tbsp. brown sugar
Peel and dice the apples. Peel and thinly slice the sweet onion. Spray the inside of a slow cooker with baking spray to prevent sticking. Place the pork pot roast inside the slow cooker. Season with salt, pepper and garlic powder. Pour the sauerkraut and its liquid all over the surface of the pot roast. Place the onions and apples evenly over the sauerkraut. Sprinkle the brown sugar over top. Cover and cook on LOW for 8 hours. Use two forks to shred the meat and mix everything together. Serve by itself, on sandwich buns, over mashed potatoes or egg noodles. ENJOY!
