How To make Creole Poached Chicken Breasts Ww
2 teaspoons olive oil
2 onions
chopped
1 green bell pepper :
seeded and chopped
1 celery stalk chopped
1/2 carrot :
peeled and chopped
14 1/2 ounces stewed tomatoes
1/2 cup low-sodium chicken broth
2 tablespoons chopped parsley
1 teaspoon ground thyme
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
16 ounces skinless boneless chicken breast halves
or one 4-ounce fillet per serving
Chicken breasts are stewed/poached in basic seasonings kicked up a notch with fresh thyme and cayenne pepper. Allow about 25 minutes to get the meal on the table.
1. Wash the chicken and pat dry with paper towels.
2. In a large nonstick skillet, heat the oil. Saute the onions, bell pepper, celery and carrot until tender, 4-5 minutes. Stir in the tomatoes, chicken broth, parsley, thyme, salt and cayenne; add the chicken and bring to a boil. Reduce the heat and poach, partially covered, until the chicken is cooked through, about 8-10 minutes.
3. Using a slotted spoon, transfer the chicken to a platter. Simmer the sauce, uncovered, until reduced by half, about 4-5 minutes. Spoon the sauce over the chicken and serve.

Creole Shrimp over Mashed Potatoes @mybizzykitchen
If you are looking for a quick and easy weeknight dinner, make this creole shrimp over mashed potatoes with corn.
I used leftover mashed potatoes that I made, but Bob Evans makes premade ones that go on sale @marianosmarket every three weeks for $2.99.
Yes, I used a tablespoon of butter in this recipe, which cost me 6 points. But I was still in my healthy eating zone by the end of the night. Don't be afraid to use things like butter and cream in moderation - that's the best part about WW is that we can incorporate favorite things from time to time.
This made one serving. 13 WW points.
4 ounces deveined shrimp, peeled (0)
1 tablespoon butter (6)
1 teaspoon creole seasoning (0)
1 cup prepared mashed potatoes (4)
1 ear of corn (3)
Microwave the corn for 2 minutes in the husk. Let cool slightly. Microwave the mashed potatoes for 2 minutes, stir to combine.
Heat skillet with avocado oil spray. Season shrimp with salt and pepper. Cook for 2 minutes a side, or until fully cooked. Remove from heat. Add butter and creole seasoning and stir until butter is melted.
Plate the corn and mashed potatoes on the plate. Top the mashed potatoes with the cooked shrimp and drizzle the creole butter over the shrimp. Don't worry there will be enough melted butter to dunk your corn into.
This literally took me 6 minutes to make from beginning to end. Sometimes we can overwhelm ourselves with all the planning, meal prepping, etc. to stay on track, but don't forget you can also rely on quick and easy dishes like this one and still stay on track.
