How To make Create A Wholegrain Muffin
3/4 c Milk
3/4 c Bran cereal
1 Egg
1/4 c Vegetable oil
1/4 c Molasses or honey
1/4 c Firmly packed brown sugar
1 c Quaker Oats, uncooked
2/3 c Flour
1 tb Baking powder
1/4 ts Salt, if desired
Combine milk and bran cereal in medium sized bowl. Add egg, oil, molasses and brown sugar; mix well. Add combined remaining ingredients, mixing just until dry ingredients are moistened. Fill 12 greased or paper-lined muffin cups 2/3 full. Bake in preheated hot oven (400 degrees) about 15 minutes. VARIATIONS: Substitute 3/4 cup unprocessed bran for bran cereal. Substitute 1/4 cup light or dark corn syrup for molasses. Add 1/2 cup raisins, blueberries, chopped dates, apple or nuts. Sprinkle batter in muffin cups with a crunchy or strusel topping. Substitute chocolate milk for white milk. Add leftover cooked corn for a dinner muffin. From: Quaker Oats

Whole grain ENGLISH MUFFIN Recipe | Make it from scratch
Today I’m sharing a whole grain English muffin recipe.
I’ve adapted the recipe from the book “The Modern Encyclopedia of Cooking” by Meta Given
Here is the recipe:
1 1/4 cups milk 1 tsp sugar
3/4 tsp salt 2 cups flour, sifted
1 1/2 tsp yeast 2 cups whole grain
1/4 cup lukewarm water -flour, sifted
1/4 cup butter, melted
1). Scald milk with salt, let cool to lukewarm. Soften yeast with the warm water and sugar. Let sit until foamy, about 10 minutes.
2). Combine the milk and yeast mixtures and add half the flour, mix thoroughly. Add the melted butter, mix, and add the remaining flour. Knead until the dough is soft and pliable. Put into a greased bowl, brushing the top with water. Cover and let rise for 2 hours.
3). Turn out onto a lightly floured surface and knead gently. Cover and let rest for 10 minutes.
Roll out to 1/2 an inch thickness with a round cutter and place on a surface that has cornmeal or been lightly floured. Let rise for 45 minutes.
4). Carefully transfer to a lightly greased griddle on moderate heat (300 degrees F). Bake about 20 minutes per side.
Serve piping hot! Makes 12

Whole Grain Blueberry Muffins
I know wholegrain blueberry muffins aren’t ‘healthy’ - but sometimes we all need a sweet treat, and these are a slightly healthy compromise! This is a great recipe I keep up my sleeve for those times when I need a little indulgence - they are sweet and satisfying. On the plus side, because they are full of wholegrains (from the oats and the wholewheat flour) they don’t give that crash and burn I certainly suffer from when eating treats made from refined white flour. Give them a try!

Soft, moist, and Eggless Banana Walnut Muffins! This easy and vegan muffin recipe comes together in minutes, and they bake up perfectly every time!
They’re crispy on the outside, soft and fluffy on the inside. You only need a couple of ripe bananas and a few basic pantry ingredients to get started.
You don’t need fancy equipment – just use one bowl and stir everything together with a spatula!
Important notes -
Don’t over mix the batter! This is my TOP TIP for the perfect fluffy muffins!
If you fewer bananas don’t worry, that will work too, there will just be slightly less banana flavor in these muffins. You can use 1 extra banana too to get more flavors of banana.
Adjust the sugar according to the sweetness of the bananas. If the bananas are not very ripe then use a bit more sugar to adjust the sweetness of these muffins.
You can easily double or tripled this recipe.
To get fluffy muffins with the nice dome shape on top, fill the muffin pan or the liners up to the very top and get them in the oven immediately.
You can flavor these muffins with cinnamon, nutmeg, cardamom, or saffron.

Ingredients
All Purpose Flour 300 grams
Baking Powder 1 tsp
Baking Soda 1 tsp
Salt 1/4 tsp
Sugar 170 grams
Eggs 2
Plain Yogurt 160 grams
Unsalted Butter 40 grams
Milk 80 grams
Oil 90 grams
Bake first in 210C pre-heated oven for 5 mins and then lower down the temperature to 170C bake for 15-20 mins.
Chocolate — cocoa powder, couverture chocolate chunks
Oreo — oreo cookies
Matcha — matcha powder, white chocolate chips, sweet cream cheese
Blueberry — fresh blueberries and almond
Strawberry — strawberry jam, sweet cream cheese, strawberry biscuits, sweet cream cheese
Carrot — grated carrot, walnut, nutmeg powder, cinnamon powder, sweet cream cheese
