Easy Homemade English Muffins Without Special Tools
You can make no-bake homemade English Muffins at home without english muffin rings, and without special tools. These are one of the easiest breads I think I've ever made. All you need is a bowl and a pan and you're pretty much set. Plus they're super nostalgic and delicious. Get your butter soaked nooks and crannies from scratch.

Ingredients you'll need:
1 tablespoon (9g) active dry yeast
1/2 cup plus 2 tablespoons (139g) water
1/2 cup plus 2 tablespoons (139g) whole milk
4 cups (480g) bread flour
1 tablespoon (13g) granulated sugar
1 teaspoon (6g) fine sea salt
2 tablespoons (28g) gently melted butter, or canola oil

BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour the milk mixture over the oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
Recipe Notes
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.

Soft, moist, and Eggless Banana Walnut Muffins! This easy and vegan muffin recipe comes together in minutes, and they bake up perfectly every time!
They’re crispy on the outside, soft and fluffy on the inside. You only need a couple of ripe bananas and a few basic pantry ingredients to get started.
You don’t need fancy equipment – just use one bowl and stir everything together with a spatula!
Important notes -
Don’t over mix the batter! This is my TOP TIP for the perfect fluffy muffins!
If you fewer bananas don’t worry, that will work too, there will just be slightly less banana flavor in these muffins. You can use 1 extra banana too to get more flavors of banana.
Adjust the sugar according to the sweetness of the bananas. If the bananas are not very ripe then use a bit more sugar to adjust the sweetness of these muffins.
You can easily double or tripled this recipe.
To get fluffy muffins with the nice dome shape on top, fill the muffin pan or the liners up to the very top and get them in the oven immediately.
You can flavor these muffins with cinnamon, nutmeg, cardamom, or saffron.
