The Best Creamy Pasta Salad (Super easy and delicious)
Creamy pasta salad made with fusilli, cucumber, celery, cherry tomatoes, red bell peppers, mayonnaise, lemon juice, salt and pepper. It is easy, delicious and uses a handful of vegetables, it is a perfect summer dish. This recipe can be served warm or cold.
This creamy pasta salad is great for summer parties, barbeques, potlucks or cookouts. This salad is a best way to use all the vegetables you have lying in your fridge begging to be used.
Switch things up, add cooked chicken, ham, bacon or tuna to bulk up this salad.
Ingredients
1 lb (450g) Fusilli pasta: any short pasta would work for this recipe
1 cup diced Red pepper I used a large red bell pepper
⅓ cup chopped celery from 1 celery stalk
½ cup feta cheese crumbled: substitute with good old cheddar cheese or mozzarella pearls.
1 cup cherry tomatoes halved
⅓ cup diced red onions
1 cup cucumber chopped
1 teaspoon dried dill substitute for fresh dill
Salt and freshly ground pepper to taste
Green onions to garnish
Dressing
1 cup light mayonnaise
1 tablespoon Lemon juice or as needed

400g of Small Pasta (I used Shells, cooked following packet instructions)
1 Cup of Diced Bacon
4 Spring Onions (thinly sliced)
2 Small Carrots (grated)
2 x 125g Cans of Sweet Corn (drained)
2/3 Cup of Garlic Aioli (or Whole Egg Mayo)
1/3 Cup of Sour Cream
Salt and Pepper
Preparation Time: About 20 minutes (plus chilling time)
Cooking Time: About 10 minutes

Ingredients:
-Water as required
-Namak (Salt) ½ tbs
-Mario’s Pasta Big elbow macaroni 200g
-Water as required
-Aloo (Potatoes) diced 2 Cups
-Gajar (Carrot) diced 1 & ½ Cup
-Matar (Peas) 1 Cup
Prepare Creamy Salad Dressing:
-Mayonnaise 1 & ¼ Cup
-Cream ¼ Cup
-Lemon juice 1 tbs
-Kali mirch (Black pepper) crushed ¼ tsp
-Bareek cheeni (Caster sugar) 1 & ½ tbs
-Namak (Salt) ¼ tsp or to taste
-Water 3 tbs
-Saib (Apple) diced 1 Cup
-Pineapple slices 1 Cup
-Fresh parsley
Directions:
-In a pot,add water & bring it to boil.
-Add salt and mix well.
-Add Mario’s pasta big elbow macaroni,mix well & boil for 5-7 minutes then strain & rinse with tap water & set aside.
-In a pot,add water & bring it to boil.
-Add potatoes and blanch for 5-6 minutes then strain & set aside.
-In the same boiling water,add carrots & blanch for 4-5 minutes then strain & set aside.
-In the same boiling water,add peas & blanch for 4-5 minutes then strain & set aside.
Prepare Creamy Salad Dressing:
-In a bowl,add mayonnaise,cream,lemon juice,black pepper crushed,caster sugar,salt,water,whisk well & set aside.
-In a bowl,add potatoes,carrots,apple,peas,pineapple,boiled elbow macaroni & mix well.
-Add prepared creamy salad dressing & mix gently.
-Garnish with fresh parsley & serve!

High Protein Creamy Chicken Alfredo! 542 Calories | 65g protein | 47g carbs | 12g fat
One of my new favourite pasta recipes, so simple, delicious and a perfect way to satisfy your creamy pasta cravings while on a weight loss journey!
Chicken marinade:
• Chicken breast cut in halves (roughly 300g raw weight)
• 1 tbsp garlic powder
• 1 tbsp Italian herbs
• 1 tbsp paprika
• 1 tsp onion powder
• tsp salt & pepper
• 1-2 tsp olive oil
Mix well
Cook for 5 mins on each side! Medium heat
Pasta:
• 120g uncooked pasta (roughly 240g cooked weight)
• 1 tsp salt
Creamy sauce:
• 200ml low fat milk
• 100g light cream cheese (i use lightest Philadelphia)
• 20g parmesan or shredded mozzarella
• 1 tsp Italian herbs
• 1/2 cup pasta water
Once added to the pan, bring to a light boil then lower the heat and add the cooked pasta and chicken
• Garnish with parsley & parmesan
This recipe makes 2 servings!
