Easy to make Apple Cider Glazed Pork Chops with Cranberry Mixed Rice recipe.
I love this Apple Cider Glazed Pork Chops with Cranberry Mixed Rice recipe. It looks very complicated at first, but it is very easy to make.
I would start making the rice first, because it needs to simmer for 30 min, so you have plenty time to prepare the pork chops in the meantime.
Enjoy

BTW, I do not enjoy speaking in front of a camera, so I prefer making these ASMR style videos. If the video didn't fully explain how to make the recipe, simply leave me a comment below. I hope you enjoy the recipe and my choice of background music. Always good to listen to some relaxing music like smooth jazz or calm folk music while cooking.
Mixed Wild Rice with Cranberries:
¾ cup wild rice blend
1 tablespoon butter
1 1/3 cup chicken stock
2/3 cup apple cider
½ cup dried cranberries
In a saucepan, add in your chicken stock, apple cider, butter and mixed rice blend and bring to a boil.
Cover and reduce heat to low and simmer 30 minutes or until rice is tender and the liquid has been absorbed. Let sit covered for 3-4 minutes.
Apple Cider Glazed Pork Chops:
2 tablespoons butter
3 tablespoons oil
2 apples, sliced thin
½ large red onion, sliced thin
2 thick cut pork chops, bone-in (12-16 ounces each)
1 cup chicken stock
1 cup apple cider
1 tablespoon whole grain mustard
2 sprigs fresh rosemary
1 sprig fresh thyme
1/3 cup heavy cream
In a large skillet melt the butter and 1 tablespoon of the oil over medium heat.
Add in the thinly sliced apples & onions, stirring occasionally until apples start to soften.
Remove them from the skillet and set aside.
Season your pork chops with kosher salt and coarse ground black pepper on both sides.
To the same skillet, that you cooked your apples & onions in, over medium heat add the last 2 tablespoons of oil.
Add in your pork chops and sear 5 minutes on each side. Remove pork chops and place on a plate and set aside.
To the skillet add in your chicken stock & apple cider. With a wooden spoon, scrape the bottom of the pan to release any brown bits from the bottom.
Add in your whole grain mustard and whisk to combine. Add in your thyme & rosemary and bring to a low simmer.
Whisk in your heavy cream and place the pork chops and apple-onion mix back into your pan.
Cook on a low simmer 10 minutes until pork chops are thoroughly cooked and sauce has thickened slightly. Plate your pork chop over your cranberry rice and spoon over the apple onion mix with the apple cider sauce.
