Ingredients:
4 cups (1 lb. 1 oz / 482 g) all-purpose or bread flour
1/2 scant teaspoon instant dry yeast
2 teaspoons salt
1 3/4 cup (14 fl. oz / 415 ml) cool water (around 70°F)
1 cup (5 oz / 142 g) dried cranberries
1/2 cup (2 1/2 oz / 70 g) chopped walnuts

But first thing make sure you've got your active sourdough starter or the levain. (Leeevaaahhnn, Leeeveeeeeeiiiin.) Whatever you call it, I call it starter hehehe
Before I bake I make sure I feed my starter twice or thrice a day as much as I can so I can get that beautiful bloom on my Sourdough Bread. Are you ready?

Cranberry Walnut Sourdough Bread !!!!

Bread notes
Sourdough levain
15 g active sourdough starter
30 g bread flour
30 g water, at around 78F/26C
Main dough
270g bread flour
30g whole wheat flour
249g water, at around 78F/26C
60g sourdough levain
6g salt
30g walnuts, toasted and chopped
30g dried cranberries, soaked in water for
2-3 hours (drain water before adding them
to the dough)
Method:
1. Make the levain:
Mix the levain and rise at around 78F/26C
for 5 hours or until peak.
2. Prepare the main dough:
Three hours after mixing up the levain, you
can start preparing the main dough:
+In a bowl, add flour and water and mix
until combined. Cover and rest/autolyse
for 2 hours - until the levain is ready.
3. Add levain and salt:
*Add levain to the main dough and hand
mix using the Rubaud mixing method (or
whatever method you prefer). | mixed for
about 3 minutes.
*Rest for 30 minutes.
*Add salt and hand mix for another 3-4
minutes.
4. Notes on the fermentation process:
| let my dough ferment/proof for 6.5 hours
at 75F/24C, including one lamination
and four coil folds. Berries and nuts were
added during lamination. Each fold was
separated by around 60 minutes in this
order: fold, lamination, fold, fold, fold.
When the dough had finished fermenting,
| shaped it into a batard, placed it in my
banneton, and transferred it to the fridge
for an overnight cold-proof.
5. Bake:
| baked the bread straight from the fridge
in a preheated cast iron pan at 500F/260C
for 20 minutes. Then, | removed the lid,
turned the heat down to 430F/220C, and
baked for another 15-20 minutes until dark
golden brown.

1.Prepare the dough
2.First Proofing
Wrap the bowl with a plastic film and let the dough stand rise in a warm environment for 1 hour or until it gets almost doubled in size.
3.Shape the dough
4.Final rising
Let the dough sit and rise in warm environment for 90 minutes.
5.Bake the Fruit Bread
Bake the Fruit bread at 350 F preheated oven for 34-35 minutes.Reduce the baking temperature to 325 F and bake for another 4-5 minutes
The top of the fruit bread or fruit loaf will start browning at around 25 minutes of baking.It doesn’t mean our dry fruit bread is done.
At this point if we take it out, the center of the fruit yeast bread will have a doughy texture and it will smell very “yeasty”
So wait for until the fruit bread is baked properly.
If you find the top getting too dark, you can tent the top with an aluminum foil at around 25 minutes and then continue baking.

Cranberry Almond bread recipe/How to make cranberry bread/ Christmas bread recipe/ #christmasrecipe
Cranberry almond bread is a great recipe to add to your holiday table. Orange juice soaked cranberries, almonds and the orange zest adds flavour and texture to the simple bread. So let’s see how we can prepare this at home.
Ingredients:
All purpose flour/ Maida: 1 cup
Sugar: ¾ cup
Refined oil: ½ cup
Milk: 1 cup
Soaked cranberries: 1 cup
Roasted almonds: ½ cup
Baking powder: 1 &1/2 tbsp
Baking soda ½ tsp
Orange zest 2 tsp
Vanilla essence: 2 tsp
Eggs: 2
• Soak cranberries in orange juice for a day.
• Take a bowl and add two eggs and whisk it till it becomes frothy.
• To this I will now add little oil at a time and keep beating till it becomes light.
• I will not add the entire oil as it might become not mix well.
• Once this is done, I will now add a sieve and add the all purpose flour, the powdered sugar.
• To this I will add 1 ½ tbsp of baking powder and ½ tsp of baking soda and mix all the dry ingredients well.
• I will then sieve it and remove the remains.
• I will now mix all the ingredients through cut and fold method.
• Add a little milk at a time to get the right consistency.
• I will now add the cranberries to the mixture. Since it contains juice, I will add it at this point to check the consistency. I will keep some cranberries for garnishing.
• Add little more milk to get the right consistency and mix well.
• Now add the chopped roasted almonds and keep some for garnishing.
• I will now add 2 tsp of vanilla essence. Mix well.
• Now collect the orange zest by grating it.
• Remember not to use the white part of the orange as it will add a bitter taste to the bread.
• Now grease a bread mold and add a bitter paper. This will help the bread to come out very easily without sticking to the mold.
• Pour the batter. Now top the bread with the remaining cranberries and chopped almonds and tap the mold, so that there are no air pockets inside. I will now bake the bread at 180C for 40 mins.
• Once this is done, insert a stick and check.
• If it comes out clean then the bread is done. If the bread is still sticky, you have to bake it for maybe another 5 mins.
• Once it is done, let it cool and de-mold the bread. Now cut into slices and serve your guests.
