How To make Couscous with Zucchini
Ingredients

zucchini, small, sliced
1
each
onion, sliced
3
cup
stock, vegetable, or chicken stock
1
seasonings, curry, garlic or Mrs. Dash
2
cup
couscous
Directions:
Bring stock, onion & zucchini to a boil, simmer 15 or 20 minutes. Add couscous. Turn off heat. Let stand 5 or 10 minutes.
Serves 2 as main dish or 4 to 6 as side dish.
Notes: this is pretty basic, use your favorite veggies, mushrooms, carrots, green beans, anything. You can't go wrong. Quick and easy.

Zutaten:
ca. 650 bis 700 g Zucchini
200 g rote fein gewürfelte Spitzpaprika 100g klein gewürfelter Fetakäse
etwas frische Petersilie und Thymian
120 g Couscous
250 ml Wasser
etwas Olivenöl Pfeffer und Salz
1 kleine gewürfelte Zwiebel

Couscous with Zucchini, Garlic and Turmeric | Vegan
Ingredients:
1 zucchini
2 cloves of garlic
1 teaspoon turmeric
2 tablespoons of oil
Salt to taste
Prepare the couscous as indicated on the package
Pour two tablespoons of oil into a saucepan
Add chopped garlic
Add the diced zucchini
Fry two for three minutes until soft
Season with salt and turmeric
Pass the couscous and mix all the ingredients together
Perfect hot and cold, you can add a tablespoon of yoghurt
