How To make Country Oat Cake
CAKE:
1 pk Spice cake mix (18.5 oz.)
1 c Quaker Oats, uncooked
-- (quick or old-fashioned) 8 oz Plain low-fat yogurt
3 Eggs; OR...
3/4 c -Egg substitute
1/4 c Vegetable oil
1/4 c Water
1 1/2 c Finely chopped apple
(about 2 medium) :
TOPPING 1 c Quaker Oats, uncooked
:
(quick or old-fashioned) 1/2 c Brown sugar, firmly packed
1/4 c Margarine or butter; melted
1/2 ts Ground cinnamon
Whipped cream (optional) Heat oven to 350 F. Grease and flour 13 x 9-inch baking pan. For cake, combine first six ingredients. Blend on low speed of electric mixer until moistened; mix at medium speed 2 minutes. Stir in apple. Pour into prepared pan. For topping, combine oats, brown sugar, margarine and cinnamon; mix well. Sprinkle evenly over batter. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Serve with whipped cream, if desired. 7 g baking powder(1 tsp)
70 g frozen blueberries(2.5 oz)
bake 45 minutes at 170°C/340°F

leave to soak for 5-10 minutes
2 eggs
30 g sweetener(stevia/or your choice)
1 teaspoon vanilla extract

50 g melted and cooled butter(~1/4 cup)
80 g chopped pinneapple(1/2 cup)
70 g blueberries(1/2 cup)
1 tbsp oat flour/ or your choice
1 tablespoon baking powder
bake 50-55 minutes at 180°C/ 360°F

A simple and quick recipe for the whole family.
Ingredients:
120 g rolled oats (1 1/4 cups)
250 ml hot milk/plant milk (1 cup)
2 ripe bananas (200 g without peel)
2 eggs
pinch of salt
30 g cocoa(4 tbsp)
5 g baking powder (1 tsp)
decorate with nuts (optional)
baking pan 22 x 16 cm / 8.6 x 6.3 inches
bake 35-40 minutes at 180°C /360°F
100 g dark chocolate(with no added sugar) / 3.5 oz
50 ml plant milk (3.5 tbsp)

Oatmeal Cake with Brown Sugar Coconut Pecan Icing
Grandma's Oatmeal Cake recipe with Brown Sugar Coconut Pecan Icing on Top. Broiled to perfection. Think... if an oatmeal cookie and a delicious cake had a baby...
1/2 cup oats
3/4 cup boiling water
1 teaspoon vanilla
Mix together ingredients and set aside for 10-20 minutes until thick.
1/4 cup lard (butter or shortening)
3/4 cup sugar
3/4 cup brown sugar
1 egg
1/2 teaspoon cinnamon
3/4 cup self rising flour
1/2 teaspoon salt
Mix together sugar and lard until combined. Add egg and mix again until smooth. Stir in oatmeal and mix. Fold in cinnamon, flour and salt with spatula until smooth. Grease a 9x9 baking dish and bake at 350 degrees for 30-35 minutes. Let cool before adding icing.
ICING
3 tablespoons butter
1/2 cup brown sugar
1/4 cup whipping cream
1/2 cup coconut
1/4 cup pecans, crushed
Melt butter and stir in sugar and cream until smooth. Remove from heat and stir in coconut and nuts. Pour over top of cake and place under broiler for 2-3 minutes, remove and let cool.

1/2 teaspoon baking soda
23 x 10 cm / 9 x 4 inches baking pan
almond flakes for decoration
bake 40-45 minutes at 180°C/ 360°F
