YOU'LL ENJOY EATING THIS FOR LUNCH OR DINNER//BEEF & POTATO
BEEF and POTATO stew
* 500g beef (flank steak)
* ½ teaspoon each of
* salt
* Crushed Bouillon(knorr beef or maggi)
* Paprika
* Garlic powder
* Onion powder
* Pepper
* Few spring of fresh thyme or 1 tsp dried
* 4 medium Irish potatoes/russet potatoes
* 2 ½ cup of water
* Extra ½ teaspoon of salt
For the vegetable stir fry:
* 2 tablespoons of butter
* 1 small onion (chopped)
* 3-4 cloves of garlic(minced)
* 2 scotch bonnet pepper(chopped)
* 2 carrots
* 1 green bell pepper
* 1 red bell pepper
* Seasoned vegetable stir fry with:
* ½ teaspoon each of salt, chicken bouillon and pepper
* Slurry:
* 1 tablespoon of cornstarch #DINNERINSPIRATION

Hello lovelies, in this week's video we are making this easy, quick and full of flavour minced beef stew. It's one of my family's favorite and can either be served with rice, chapati or ugali.

-400grms minced beef
-1 large onion, chopped
-1tbsp garlic/ginger paste
-1 large potato, cubed
-1 carrot, cubed
-1/2cup green peas

-1/2tsp salt
-1 beef cube
-1 cup water

Mexican Beef and Rice Casserole
Ingredients
⦁ 1 Tablespoon oil
⦁ 1/2 onion , chopped
⦁ 1 green bell pepper , chopped
⦁ 2 cloves garlic , minced
⦁ 1 pound ground beef
⦁ salt and pepper (to taste)
⦁ 3 Tablespoons taco seasoning (either 1 store-bought packet or homemade)
⦁ 1-1/2 cups red salsa
⦁ 2 Tablespoons tomato paste
⦁ 1 cup ⦁ corn , drained
⦁ 1 (16-ounce) can black beans , drained
⦁ 1 (4-ounce) can green chilies
⦁ 1 cup ⦁ long grain white rice (uncooked)
⦁ 2 cups ⦁ beef broth
⦁ 2 cups shredded Mexican Blend Cheese (Cheddar, Monterrey Jack)
Instructions
0. In a large skillet, over medium heat, cook the chopped onion, and bell pepper in oil for about 5 minutes or until the onion and bell pepper are softened.
1. Add the minced garlic and cook for about 1 minute stirring frequently to prevent the garlic from burning.
2. Add the ground beef and cook for another 5 minutes. After the ground beef is cooked, drain the extra grease.
3. Sprinkle taco seasoning over the cooked ground beef and stir until the ground beef is covered with the taco seasoning.
4. After the ground beef is seasoned and cooked, add the drained corn, black beans, salsa, tomato paste, and green chilies and stir until all ingredients are evenly distributed throughout the dish.
5. Add the uncooked rice and beef broth.
6. Cover and bring the rice mixture to a boil and then reduce the heat to low and simmer for about 18 to 22 minutes until rice is done.
7. Sprinkle shredded Mexican Cheese over the casserole. Cover for about 3 to 5 minutes to allow the cheese to melt.
8. Garnish with chopped tomatoes, green onions, or cilantro. Serve hot!

Ingredients
6 large peppers (any color)
1lb of lean ground beef
8 oz of sausage
½ cup of chopped onions
⅔ cup of cooked rice
1 teaspoon of salt
1 teaspoon of pepper
1 tablespoon of minced garlic
20 oz of spaghetti sauce (or tomato sauce)
1 cup of shredded mozzarella cheese
Directions
Cut the peppers in half lengthwise
Remove seeds and membranes, and rinse.
Add enough water to a large pot to cover your peppers. Bring the water to a boil and add your peppers. Let cook for 5 minutes.
Drain your peppers and set aside.
Add ground beef, sausage, and onion to a large skillet. Brown and drain it.
Add garlic, salt, and pepper to the skillet. Saute it for 1 minute.
Add your cooked rice and half of your spaghetti sauce and heat until hot.
Spray a baking dish with a non-stick spray.
Stuff your peppers with the mixture and place into the baking dish.
Pour the remaining sauce over the top of the peppers.
Cover the baking pan with aluminum foil and bake for 30 minutes at 375° in the oven.
Remove from the oven. Remove the aluminum foil and top the peppers with mozzarella cheese.
Then cover and bake for another 20-25 minutes (uncover for the final 10 minutes).
Remove from the oven. Top with chopped parsley and serve.
