Dutch Oven Cornish Hens with Crispy Potatoes and Mushroom Gravy
As I've said before, I really enjoy cooking delicious meals out in the middle of nowhere, using rustic methods and gear. With my trusty Dutch oven and a cast iron skillet, watch as I prepare an amazing feast of Cornish hens and crispy baby potatoes, topped with a savory mushroom gravy.
My Dutch oven is a Coleman 6 quart. I'm not sure if they make it anymore, but any cast iron Dutch oven of a similar size and style will work. Such as this Lodge 6 quart:

Welcomed back to my channel. Today I’ll be showing you how I made these delicious Cornish hens.
INGREDIENTS:
Cornish hens
1 tbsp garlic powder
1 tsp black pepper
1 tsp chicken seasoning
Salt to taste
1 tsp smoked paprika
2 tbsp jerk seasoning
1 tbsp olive oil
3-4 tbsp sweet chili sauce
3-4 tbsp honey
3-4 tbsp bbq sauce
Chopped potatoes, onion, garlic, bell peppers, celery, thyme and carrots
Chicken took a total of 60-75 minutes to cook at 350-375•

1/2 cup mayo
1 tsp cayenne pepper
2 tsp black pepper
1/4 cup apple cider vinegar
Juice of 1/2 lemon
2 tsp horseradish sauce
2 tsp Worcestershire sauce
Salt to taste

We're back at it again family! Cornishhens or cornish game hens are an excellent option for fancy dinner , thanksgiving or just for fun.. So let's get started!
INGREDIENTS:
1tbsp of Parsley flakes
1tbsp garlic powder
1tbsp paprika
1tbsp black pepper
1tbsp lemon pepper
1tbsp chicken bouillon powder
2 tbsp of lemon juice
2tbsp of my homemade green seasoning paste which consist of fresh herbs such as parsley, thyme, scallions, bell pepper(color of your choice), shallots, olive oil..
To make your seasoning paste blend all of the fresh herbs I mentioned with your olive oil then mix it all in with the seasoning powders mentioned above including the lemon juice to marinate your poultry.. set your oven to 375 for 35-45 mins, cover with an aluminum so your bird(s) can cook evenly and thoroughly.
Once your bird(s) is fork tender , uncover and let it brown to your desired liking.
Feel free to add in the veggies of your choice while it's browning...

Ingredients for green seasoning paste( épis)
*Olive oil
*2 bunches of parsley
*3-4 scallions or green onions
*Assorted bell peppers( I prefer mine on the greener side, so I use green, red and yellow)
*fresh thyme
*6-7 black cloves
*4-6 shallots
*feel free to add habenero peppers (optional)
*3-4 bouillon cubes
PLEASE BE SURE TO WASH YOUR HERBS UNDER RUNNING WATER TO GET RID OF DIRT AND DEBRIS!

2 Cornish Hens
2-3 carrots
2-3 stalks of celery
1 large yellow onion
rosemary/thyme/parsley
4 cloves of garlic
1 lemon
olive oil
salt
Compound Butter:
1 stick kerry gold butter (room temp)
1 tbsp each rosemary and thyme
2 cloves minced garlic
lemon zest
1 tbsp lemon juice
salt, pepper, garlic, onion powder, smoked paprika
1 tsp chicken bouillon
Gravy:
2 tbsps butter
2 tbsps flour
1/2 cup pan drippings
salt, pepper, garlic, onion powder (or cajun seasoning)
1 cup chicken broth
1/4 cup heavy cream
