Fresh Raspberry Mini Corn Muffins

Ingredients
Baking spray with flour, such as Pam
3 cups all-purpose flour
1 cup granulated sugar
1 cup fine cornmeal, such as Indian Head
2 tablespoons baking powder
1 tablespoon kosher salt
2 cups whole milk
2 extra-large eggs
1/2 pound (2 sticks) unsalted butter, melted
12 ounces firm fresh raspberries
2 tablespoons turbinado sugar, such as Sugar in the Raw
Directions
Special equipment: two 24 mini muffin pans
Preheat the oven to 375 degrees F. Arrange two racks evenly spaced in the oven. Generously spray two mini muffin pans (24 mini muffins each) with the baking spray, including the tops of the pans.
In a large bowl, whisk together the flour, granulated sugar, cornmeal, baking powder, and salt. In a separate bowl whisk together the milk, eggs, and butter. Make a well in the middle of the dry ingredients, pour the wet ingredients into the well, and stir with a rubber spatula, just until combined. (Don’t worry if it’s a little lumpy.) Set the batter aside for 15 minutes.
When the batter has rested, fold the raspberries into the batter with the spatula. With a small (1 3/4-inch) ice cream scoop (you can also use a spoon), fill each muffin cup with a rounded scoop of batter, making sure each one contains some raspberries. Sprinkle the full 2 tablespoons of turbinado sugar on the muffins.
Bake for 20 minutes, until the muffins spring back when gently touched and a cake tester comes out clean. Serve warm or at room temperature.
Make ahead: Prepare the batter completely, cover, and refrigerate. Scoop and bake the next day.

What you need for this Jalapeno Corn Muffin Recipe
¾ cup CORNMEAL ...we use a medium grind in this recipe
1¼ cup ALL-PURPOSE FLOUR
2½ tsp BAKING POWDER
½ tsp SMOKED PAPRIKA
½ tsp CHIPOTLE or regular chili powder
½ tsp SALT...unless the corn or butter already contains salt
1 cup MILK
2 Tbsp OIL or use melted butter instead
4 Tbsp HONEY
1 EGG
1 cup CANNED WHOLE KERNEL CORN drained
¼ cup PICKLED JALAPENOS, roughly chopped
¼ ONION, minced
1 cup freshly shredded CHEDDAR CHEESE plus ¼ cup for topping
fresh JALAPENO deseeded and sliced for topping...or you can use pickled slices for the topping
How to make Corn Muffins
Place rack in middle of the oven.
Heat oven to 400 degrees Fahrenheit.
Grease 12 muffin pan cups or line with parchment paper baking cups and set aside.
Combine dry ingredients in bowl.
Combine remaining ingredients in another bowl and mix, but reserve fresh jalapeno slices and a little cheese for topping.
Add the dry ingredients to the wet and stir until ingredients are moistened.
Fill prepared muffin cups evenly.
Top with fresh jalapeno slices and a very light sprinkling of cheese. Bake 20-30 minutes or until toothpick inserted into center comes out clean and muffins are golden brown. Allow to cool for
5 minutes before removing from muffin tins.
That's it! Hope you like this cheesy jalapeno corn muffin recipe. You can serve them hot or cold for breakfast, lunch or dinner, and I especially love them in the morning with over easy eggs.

Corn Muffin
✔️Ingredients
1 whole large egg [60 grams]
1 cup white sugar [200 grams]
1 cup fresh milk [240 ml]
1/4 cup melted butter [60 ml] (or cooking oil instead)
1 tsp vanilla extract [5 ml]
2 & 1/2 cups all purpose flour [340 grams]
1 tbsp baking powder [4 grams]
1/4 tsp salt (skip salt if using salted butter)
1 cup cream corn [280 grams] (store bought cream style corn kernel in can)
*yellow food coloring (optional)

Ingredients Used (makes about 12-14 muffins)
2 boxes of jiffy mix
3 eggs
2/3 cup buttermilk
7 Tbsp Melted butter @ room temperature
1 tsp pure vanilla extract
1 15oz can cream style corn (or 1 15oz drained whole kernel corn)
Bake as directed @ 400F for 15-20 Minutes or until a toothpick inserted comes out dry. *NOTE* It may take longer to bake due to the added ingredients so make sure they cook thoroughly!
For glaze
1Tbsp melted butter
1tsp honey
