How To make Coriander Fish (Bharia Machli)
4 lb Sole, flounder, rock cod, or
Other white f 8 Cloves garlic
3 Hot chillies
1 Inch ginger
1 md Bunch coriander
1 tb Coriander seeds
1 ts Brown sugar
1 ts Turmeric
1/2 ts Black mustard
1/2 ts Fenugreek seeds
1 tb Salt
1/2 c Lemon juice
1/2 c Vegetable oil
2 c Chopped onion
1 c Chopped tomato
1/2 ts Garam Masala
1. Wash and pat dry fish. Sprinkle 1t salt inside and set aside.
Preheat oven to 400f 2. Blend garlic, chili, ginger, 1/2 the corriander, corriander seeds, brown
sugar, turmeric, mustard seeds, fenugreek seeds, salt and lemon juice till it all becomes a smooth paste (add some water if needed.) 3. Fry onions till they are soft and golden brown.
4. Add the blended masala and cook till most of the liquid is gone and it
starts to leave the sides of the pan. 5. Add the tomatoes and Garam Masala. Fry for 2 minutes more and remove.
6. Coat one side of fish, stuff 1 1/2 cups inside. Close opening, spread
the rest of the masala over it. Cover tightly and bake for about 25 minutes. 7. Grill for 1 or 2 minutes in broiler and sprinkle the remaining

FISH CURRY RECIPE
RECIPE IN ENGLISH
Ingredients:
• Fish 1 kg (marinate for 2 hours in ginger garlic paste, salt and turmeric powder)
• Oil 1 cup
• Onion 1 large
• Tomato 1 medium
• Green chili 2-3
• Coriander leaves 1 tbsp
• Cumin seeds ½ tsp
• Whole red chili 5-6
• Ginger garlic paste ½ tbsp
• Salt 1 tbsp
• Red chili powder 1 tbsp
• Turmeric powder ½ tsp
• Cumin + coriander (roasted and crushed) 1 tbsp
• Garam masala powder ½ tsp
• Water 3 cups
• Coriander leaves for garnish
Directions:
• Marinate fish in ginger garlic paste, salt and turmeric powder for 2 hours.
• Fry fish in oil for 1 minute and set aside.
• In a bowl add onion, tomato, green chili and coriander leaves and blend them to make a paste.
• Heat oil and cumin seeds and whole red chili and cook for 1 minute.
• Add onion paste, ginger garlic paste, salt, red chili powder, turmeric powder, cumin + coriander powder and garam masala powder and mix it well.
• Cook it till oil separate.
• Add water and fried fish and cook it till it starts boiling.
• Then cover and cook for 2-3 hours on low flame.
• Add coriander leaves and turn off the flame.
RECIPE IN URDU
Ajza:
• Fish 1 kg (marinate for 2 hours in ginger garlic paste, salt and turmeric powder)
• Oil 1 cup
• Pyaaz 1 large
• Tamater 1 medium
• Hari mirch 2-3
• Hara dhania 1 tbsp
• Zeera ½ tsp
• Saabut lal mirch 5-6
• Adrak lehsan paste ½ tbsp
• Namak 1 tbsp
• Lal mirch powder 1 tbsp
• Haldi powder ½ tsp
• Zeera + dhania (bhuna or kuta) 1 tbsp
• Garam masala powder ½ tsp
• Water 3 cups
• Hara dhania garnish ke liye
Directions:
• Sab se pehle fish ko lehsan adrak paste, namak or haldi powder daal ker marinate ker len 2 hours ke liye.
• Ab fish ko fry ker len 1-minute tak or aik taraf rakh den.
• Aik bowl mein pyaaz, tamater, hari mirch or hara dhania daal ker blend ker len or paste bana len.
• Ab oil garam ker ke us mein zeera or sabut lal mirch daal ker 1 minute tak pakayen.
• Ab pyaaz ka paste, adrak lehsan paste, namak, lal mirch powder, haldi powder, zeera + dhania powder or garam masala daal ker mix karen.
• Oil separate hone tak pakayen.
• Ab paani or fish daal den or ubaal ane tak pakayen.
• Ab isko dhak ker 2-3 hours ke liye pakayen halki aanch per.
• Ab hara dhania daal ker aanch band ker den.

Ingredients :
1. Basa Fish
2. Lemon
3. Rice flour
4. Red chilli poeder
5. coriander-cumin powder
6. Ginger garlic paste
7. Chopped coriander
8. Egg
9. Salt
Method :
1. Take the fish pieces in a bowl and squeeze lemon juice in it , Add salt
2. Add ginger garlic paste , Red chilly powder and coriander-cumin powder
3. add egg yolk (break the egg)
4. Also add rice flour and chopped coriander
5. Mix well and marinate for 15 mins
6. Fry till golden brown
7. Serve and enjoy

It is loaded with the flavors of aromatic spices especially the Kashmiri red chilli powder. The ingredients used to prepare this curry are Kashmiri red chili powder, turmeric powder, saunf powder, coriander powder, cloves,cardamoms etc and refined oil. The fish usually used to prepare this dish is Kashmiri fish (from Wular lake) is a perfect recipe for any day. The fish is fried before adding it to the gravy to give it a crispy texture. You won't be able to resist yourself from having this dish. You will fall in love with the flavours of this fish curry. It has a tangy taste of the tomatoes which makes it even more delectable. It tastes best when served with rice.

Ingredients for Chapata Fish Fry:
- Rohu/Katla/Asian Carp fish pieces - 500 gms (7-8 big pieces)
For Marination:
1st Marinade:
- Salt- 1 tsp
- Turmeric powder-1/2 tsp
2nd Marinade:
- Masala Mix:
- Besan (Gram flour)-1 tbsp
- Red Chilli Powder- 1 tbsp
- Coriander powder- 1.25 tsp
- Garam masala powder- 3/4 tsp
- Salt- 1/4 tsp
- Ginger garlic paste- 2 tsp
- Juice of lemon- 2 tsp
- Water- 1 tbsp
- Oil- 2 tbsp
- Curry leaves fine chopped- 2 tbsp
- Coriander leaves fine chopped- 2 tbsp
Other Ingredients:
- Oil- 3 tbsp
Preparation:
- Clean and wash the fish pieces. Pat dry
- Fine chop the curry leaves and coriander leaves.
Marination:
- Add 1 tsp salt and the turmeric powder to the fish pieces. Rub it on both sides and set aside for around 10 mins.
- For the 2nd marinade, take a bowl and add all the items for the marinade specified above. Mix it well and then add the marinated fish pieces. Mix well and set aside for 1 hr.
Process:
- Take a frying pan and heat the oil.
- Now place the fish pieces side by side and fry on medium heat for 3 mins.
- Now turn the pieces on the other side and repeat the same on the other side (on medium heat for 3 mins)
- Turn it again and continue frying on low heat for 2-3 mins more on both sides till browned.
