Easy Homemade Chicken Cordon Bleu Recipe
Chicken Cordon Bleu is a recipe you'll want to break out for a fancy but easy dinner. It is surprisingly simple to pound chicken thin, roll it up with Swiss cheese and sliced ham, pan fry, and then bake in the oven for ooey, gooey creaminess. Top it with a delicious Dijon sauce to complete this main dish.

RECIPE
STUFFED MEATBALLS
1lb Ground Chicken
4 Oz Cubed Swiss
4 Oz Black Forest Ham
1 Cup Heavy Cream
2 Eggs
5 oz Ground Pork Rinds
1) Grab about 3 oz of your ground chicken and flatten it out into a circle on a work surface. Place aslice of ham on top of that, and the a couple cubes of cheese. Pick the whole thing up and encase the ham and cheese with the ground chicken.
2) In a bowl, combine your eggs and cream. Place your balls into your cream mixture and then into your pork rinds.
2) Place these onto a parchment lined baking sheet and place them into a noven at 375°F for 22-25 minutes or until firm and golden brown. Let rest for 5 minutes before serving.
MEATBALLS
1lb Ground Chicken
4 Oz Cubed Swiss
4 Oz Black Forest Ham
1 Cup Heavy Cream
2 Eggs
5 oz Ground Pork Rinds
1/4 Cup Water
1) In a blender cup, add your chicken, swiss, ham, and water. Blend until everything is homogenous. Refrigerate for at least 10 minutes to allow to firm up.
2) Ball up by hand (or using an ice cream scoop) and drop them into your cream mixture. Then into your breadcrumbs. Place onto a parchment lined baking sheet.
3) Place the pan into an oven set to 375°F for 18-20 minutes or until golden brown.

Grilled Chicken Cordon Bleu

Ingredients
4 boneless, skinless chicken breasts, pounded thin
Olive oil
Salt and freshly ground black pepper
1/2 pound triple creme cheese (recommended; Red Hawk) or brie, thinly sliced
2 lemons, halved
8 paper thin slices prosciutto
1/4 pound baby arugula
Directions
Heat the grill to high.
Brush the chicken on both sides with oil and season with salt and pepper, to taste. Grill until slightly charred on both sides and just cooked through, about 2 minutes per side. Put a few slices of cheese on each breast, close the cover and let it melt slightly, about 40 seconds. Brush the cut side of lemons with oil and grill, cut side down until golden brown and slightly charred, about 45 seconds.
Put the chicken on large serving plates, top each breast with 2 slices of prosciutto and some arugula. Squeeze the grilled lemon on top and drizzle with olive oil.

Cordon bleu literally means blue ribbon in French but it doesn't mean the dish had a French origin. It actually came from Switzerland from a clever restaurant cook who was short of ingredients for an unexpected tall order and thought of making schnitzels filled with ham and cheese to accommodate everybody. The cook was offered by the restaurant owner Le Cordon Bleu, a term used to recognise an excellent cook in France, which is also a famous culinary school. The cook humbly declined and said to name her dish that instead. Hence, it became what we know now as chicken cordon bleu. Something that sounds so lavish is actually a relatively easy dish to make. We'll show you how we made our chicken cordon bleu with a creamy Dijon sauce.
