Hi guys, welcome to Marks Irish Kitchen, todays recipe is a total comfort food recipe. Its homemade Chicken Casserole with Potatoes and mixed Vegetables in a thick Chicken sauce. Just what is needed after a day at work or when the weather is bad or if you just need a pick me up. Its also a great healthy midweek meal.
Ingredients
1 tbsp olive oil
450g chicken thighs
1 onion, finely sliced
2 celery sticks, thickly sliced
2 carrots, cut into 2cm (3⁄4in)
600 g (1lb 6oz) potatoes cut into large chunks
2 level tbsp plain flour
350 mls(2/3 of a pint) hot chicken stock
Directions
Heat oil in a large, flameproof casserole. Season chicken pieces and brown all over for 10min. Remove and set aside. Drain fat from the pan - there should be around 75ml (3fl oz). Pour just 1tbsp oil back in to the pan and discard the rest. Preheat oven to 200ºC (180ºC fan oven) mark 6.
Add the onion, celery, carrots, to the pan, and cook, stirring, for 5-10min. Stir in the flour, cook for 2min, then pour in the stock. Add the potatoes and season well, then return the browned chicken to the pan. Cover and bring the casserole to the boil.
Cook in the oven for 25-30min until the chicken is cooked through and the sauce is piping hot and thickened.
Serve with crusty bread and enjoy.

Crockpot Chicken and Gravy | Dump and Go Crockpot Meal | Chicken Crockpot Recipe
Crockpot Chicken & Gravy
1-2 lb chicken breasts, trimmed (2-3 chicken breasts depending on size)
1 can cream of chicken soup
2 packets chicken gravy mix
1 tsp garlic powder
1/2 tsp poultry seasoning
1/2 tsp black pepper
2 cups water
Cook on LOW for 6-8 hours, break chicken apart and serve with sides of your choice. I served this with mashed potatoes and butternut squash.
I recommend cooking on LOW for 6-8 hours but this can be cooked on HIGH for 4-5 hours.
Potatoes:
5 russet potatoes
1/2 stick unsalted butter
1/2 tsp garlic powder
generous pinch of kosher salt
pinch black pepper
1/4 - 1/3 cup heavy cream or milk
Butternut Squash:
1 large butternut squash
3 tbsp unsalted butter
1 tbsp sugar
kosher salt
cinnamon

1kg skinless and boneless chicken thighs, visible fat removed, cut into chunks
4 large onions, chopped
2 chicken stock pots
500g carrots, sliced
2 medium leeks, sliced
4 celery sticks, sliced
2 tsp dried thyme
2 tsp yellow mustard seeds
Spray a large non-stick frying pan with low-calorie cooking spray and put it over a high heat. Brown the chicken in batches, then tip it into a 3-litre (or larger) slow cooker. Repeat with the onions (browning the chicken and onions first really boosts the flavour but if you’re short of time you can skip this step).
Stir the stock pots into 300ml boiling water and add to your slow cooker with all the other ingredients and a little salt and pepper.
Cover and cook on high for 3 hours or until the chicken is cooked and the vegetables are tender. Divide into 2 equal portions. If you don’t have a slow cooker, put everything in a large covered casserole pan or ovenproof dish and cook at 190 ̊C/fan 170 ̊C/gas 5 for 1-1½ hours, topping up the stock if necessary.

A good, creamy chicken casserole from the slow cooker is one of those great meals that everyone loves to eat, full of vegetables and soft chicken in a delicious sauce.
TIPS FOR THIS RECIPE
For a Thicker sauce add 2 Tablespoons of flour.
Add Potatoes, sweet potatoes or baby sweetcorn to add colour and flavour to the casserole.
