Chocolate Coca Cola Cake | Easy Chocolate Cake | Bake with Me
This recipe is a decadent one that my grandmother used to make for us for special occasions. She often made this cake for our first weekend of the summer up at the lake house or for a birthday celebration. It is one of those recipes that brings back so many beautiful memories of watching my grandmother in the kitchen, whisking and chatting with me as I helped crack eggs or measure ingredients. This is a great recipe for a crowd and even better served with a scoop of vanilla ice cream. I hope you enjoy this one!

Coca-Cola Cake
1 1/4 cup flour
1 3/4 cups sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup buttermilk
1 1/2 tsp vanilla
1/2 cup unsalted butter
1/2 cup unsweetened cocoa powder
1/2 cup vegetable or canola oil
1 cup coca-cola
Frosting:
3 cups powdered sugar (whisked or sifted)
1/2 cup unsalted butter
1/4 cup unsweetened cocoa powder
1/3 cup coca-cola
1 1/2 tsp vanilla
Optional:
3/4 cup chopped pecans
Instructions:
Preheat your oven to 350 F. Grease a 9x13 pan.
In a large bowl, whisk together the flour, sugar, baking soda and salt. In another bowl, whisk together the buttermilk, eggs and vanilla. In a medium saucepan over medium-low heat, melt the butter. Once melted, whisk in the cocoa powder, oil and coca-cola. Bring just to a boil and remove from heat. Let cool about 5 minutes. Mix the buttermilk mixture with the dry ingredients and after the cocoa mixture has cooled slightly mix in small amounts until all combined. Be careful to add small amounts at first to avoid scrambling your eggs. Make sure batter is mixed well and pour into prepared 9x13 pan. Bake at 350 for 28-30 minutes, or until a toothpick comes out clean. Let cake cool while you make the frosting.
Put powdered sugar in large bowl. In medium saucepan over medium heat, melt the butter. Whisk in cocoa powder and coca-cola and bring just to a boil. Remove from heat and add vanilla. Pour cocoa mixture into powdered sugar, whisking to combine. Once thoroughly combined, pour warm frosting over warm cake. Add pecans and let cool. Best served with a scoop of ice cream with family and friends. Enjoy!

Coca Cola Chocolate Cake For Two Recipe - Glen And Friends Cooking
This Coke Cake recipe is a riff on a Chocolate Buttermilk Cake recipe where we've substituted Coca Cola for a bit of caramel flavour, and replicate the acid content of the buttermilk. This isn't that famous Cracker Barrel Coca Cola Cake, or even a copycat Coca Cola cake from Cracker Barrel... But it's still an amazing moist flavourful cake.
Ingredients:
For the cake:
60 mL (¼ cup) butter, softened
90 mL (¼ cup + 2 Tbsp) sugar
1 egg yolk
2 mL (½ tsp) pure vanilla extract
125 mL (½ cup) all-purpose flour
20 mL (1 Tbsp + 1 tsp) unsweetened cocoa powder
1 mL (¼ tsp) baking soda
Pinch salt
30 mL (2 Tbsp) buttermilk
60 mL (¼ cup) Coke
For the Icing:
45 mL (3 Tbsp) butter
10 mL (2 tsp) cocoa powder
45 mL (3 Tbsp) Coke
250 mL (1 cup) icing sugar
1 mL (¼ tsp) pure vanilla extract
60 mL (¼ cup) chocolate chips
Method:
Preheat the oven to 180ºC (350ºF), and grease a 6 round cake pan.
Whisk together the flour, cocoa powder, baking soda and salt.
In another bowl, cream together the butter and sugar until fluffy.
Beat in the egg yolk then the vanilla and mix until combined.
Mix some of the Coke and buttermilk into the butter mixture, then mix in some of the flour.
Alternate until all ingredients are combined.
Scrape the batter into the cake pan, and bake for 25-30 minutes.
While the cake is baking, melt together the butter, cocoa, and chocolate chips.
As this is melting whisk in the Coke.
Once everything has melted together, remove from the heat and whisk in the icing sugar.
Set aside and allow to cool - it will thicken as it cools.
When the cake is fully baked, remove from oven and allow to cool to room temp before icing.

COCA-COLA CAKE
Preheat oven to 350 degrees F.
Butter a 13 by 9 pan. Set aside.
Cake
2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon, ground
1 (12 oz.) can of Coca-Cola
1 cup butter, cubed
1/4 cup unsweetened cocoa powder
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla extract
Frosting/Glaze
4 cups powdered sugar
1/4 cup unsweetened Cocoa
1/2 cup butter, cubed
1 (12 oz.) can Coca-Cola
1/2 cup pecans, optional
1. In a large bowl, whisk together flour, sugar, baking soda, salt and cinnamon. Set aside. In a small saucepan add cola, butter and cocoa, over medium-heat, bring just to a boil, stirring occasionally. Add to flour mixture, stirring until just moist.
2. In a small mixing bowl, whisk together eggs, buttermilk and vanilla. Add buttermilk mixture to flour mixture, whisking until well blended.
3. Pour into prepared buttered pan. Bake 25-30 minutes or until toothpick inserted in center comes out clean.
4. About 15 minutes before cake has completed baking, prepare frosting/glaze. In a small saucepan, over medium-heat, bring can of Cola to a boil. Reduce cola liquid to 1/2 cup; this will take about 15 to 20 minutes. Whisk in butter and unsweetened cocoa. Remove from heat.
5. Whisk in powdered sugar until smooth. Stir in pecans (optional) at this time. Pour over warm cake. Cool about 1 hour before serving.
