1/4 c Vegetable oil

1/2 ts Cream of tartar

Dissolve instant coffee powder in 1/4 cup water; set aside. Sift together flour, 1/2 cup sugar, baking powder, and salt in a mixing bowl. Make a well in center; add oil, egg yolks, water and coffee mixture, and vanilla. Beat at high speed of an electric mixer about 5 minutes or until satiny smooth. Beat egg whites and cream of tartar in a large mixing bowl until soft peaks form. Add remaining 1/2 cup sugar, 2 tablespoons at a time, and beat until stiff peaks form. Pour egg yolk mixture in a thin, steady stream over entire surface of egg whites; then gently fold whites into yolk mixture. Pour batter into an ungreased 10-inch tube pan, spreading evenly with a spatula. Bake at 325 degrees for 1 hour or until cake springs back when lightly touched. Invert pan; cool 40 minutes. Light and Fluffy Coffee Chiffon Cake!
In this video, I'll teach you step by step on how to make a light and fluffy coffee flavored chiffon cake with fresh coffee. I've been using this recipe for several years and this cake is one my most requested items from friends and family. It isn't hard to make, even if you've never baked before.
The coffee I brew is a bit stronger than usual since Im not drinking it. I've used dark roast and light roast coffee. For dark roast, I use Peet's Major Dickason's Blend. I used a light roast from LaColombe to make the cake in the video since that's what I had available.
Make sure the eggs are at room temperature and I used large eggs.
If you don't have cream of tartar for the egg whites, keep an extra eye on the eggs when beating them because they may clump up. The cream of tartar helps to prevent clumping. If the egg whites are clumped up, then you'll have to start over.

Coffee chiffon cake: fluffy, tall and simple to make!
INGREDIENTS
10g (1 ½ tbsp) instant coffee
20ml (1 tbsp) hot water
5 egg yolks
60g (¼ cup) sugar
70ml (¼ cup) vegetable oil
1 tsp vanilla sugar
70ml (¼ cup) milk
100g (1 cup) cake flour
5g (1 tsp) baking powder
3g (½ tsp) salt
15ml (1 tsp) white vinegar
5 egg whites
100g (½ cup) sugar
METHOD
1. In a large bowl whisk coffee with hot water until dissolved completely.
2. Add egg yolks to the coffee mixture followed by 50g of sugar, vegetable oil, vanilla, and milk. Whisk well.
3. Sift flour, salt, and baking powder into a bowl of liquid ingredients and whisk well once more.
4. In a separate bowl beat egg whites with vinegar until foamy. Start adding sugar in portions while still working the egg whites with a mixer. Beat until soft peaks form, then fold egg whites into the batter.
5. Pour the batter into a 20cm bundt cake pan and bake for 30-35 minutes at 170°C/338°F.
