This is a good, moist, old-fashioned pound cake flavored with a little lemon and coconut. You can also use the base recipe and then flavor it anyway you like. Great on it's own, or it can be glazed or served with fruit and/or ice cream.

Butter 150g (2/3 cups)
Sugar 150g (¾ cup)
3 Eggs
Plain flour 150g (1 cup)
Baking powder 1 teaspoon
Desiccated Coconut 50g (½ cup)
Coconut Milk 60ml (¼ cup)
Vanilla extract 1 teaspoon
Almond essence ½ teaspoon (optional)
Icing Drip:
Powdered Sugar 1/2 cup
Coconut milk 1-2 teaspoons
Coconut flakes (optional)
Measuring cup size - 240ml
Baking pan 21x11x6 cm (2 Lb)
Bake in a preheated Oven at 170c (338f) for 40 - 45 minutes

Coconut Cake
Ingredients
Butter 125 gm
Sugar 125 gm
Eggs 3 pieces
Fine Flour 110 gm
Milk Powder 20 gm
Coconut Powder 30 gm
Vanilla Essence 2-3 drops
Baking Powder 4 gm
Method
Beat butter and sugar in a bowl. Then add egg in it. Mix it well. Now add vanilla essence in it. Add coconut powder, fine flour, milk powder and baking powder in it. Now pour into the mold and bake it at 170° for 20 to 25 minutes.
