How to make Trini Coconut Bake ( Soft )- Detailed ( Vegan)- Episode 2017
These bake at 400 deg. F for 15-20 mins
2 cups fresh coconut milk - warmed
4 cups of flour
2 tsp yeast
1 tsp brown sugar
1/4 cup crisco/ butter/ cookeen/ lard
1/2 cup freshly grated coconut ( fine)
1/2 tsp salt.

Trini Coconut Sweet Bread
Ingredients:
2 cups flour
2 tsp baking powder
1 cup granulated sugar
dash of salt
1 dried coconut - grated finely
1 cup butter or 2 sticks (227g)
1/4 coconut milk
1 1/2 tsp vanilla extract
1 tsp cinnamon
1 tsp nutmeg
1/2 cup of mixed fruits
1/2 cup dried cranberries or raisins
1 egg
Bake at 325 F for and hour or until a skewer or knife comes out clean when you stick it.

Best Trinidad Coconut Sweet Bread Recipe
Trinidad sweet bread is a dense, rustic bread made with fresh coconut, raisins, mixed fruit and spices. It is made in Trinidad especially during the holidays including Christmas and Easter but great for an all year long snack or breakfast. My sweet bread recipe results in a bread that's addictive and crunchy on the outside and soft on the inside. A perfect balance of texture and flavors!

Ria's Sweet Bread Recipe
4 cups all-purpose flour, sifted
2 cups brown sugar, plus 2 tbs
4 teaspoons baking powder
1 teaspoon ground cinnamon
½ tsp freshly grated nutmeg
1 tbs grated ginger, optional
¼ tsp Himalayan salt
3 cups finely grated coconut (14 oz)
½ cup seedless dark raisins
½ cup candied mix fruit, optional (mis peel)
½ cup (1 stick) organic sweet cream butter, melted¬
3/4 cup evaporated milk, or more as needed
1 tbs pure vanilla extract
2 eggs, beaten, optional
Bowl, measuring cup, measuring spoon, 2 (9x5) baking pans,
Preheat oven to 325 degrees Fahrenheit.
1. Grease two bread pans (9x5) or one large and one small and set aside.
2. In a large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, ginger and salt.
3. Stir in coconut, raisins and mixed fruit (if using).
4. In a measuring cup, add evaporated milk, eggs if using, melted butter and whisk to combine. Add to dry ingredients and mix just until combined. The dough should be slightly sticky, if not add more evaporated milk. If you are not using the eggs, you will definitely need to use more evaporated milk.
5. Divide dough, form into a loaf with your hands and place in prepared pans. Place in the oven and bake until fully cooked, the outside is dark golden brown and a toothpick or skewer comes out clean, about 60 – 90 mins.

Hello Lee squad today i'm sharing for the second time my Coconut Bake Recipe, it has since been modified and i do hope you enjoy making these beauties, i sure did. please share your results with me.
Coconut Bake Recipe
6 cups flour
3 small coconuts ( yielded 3 cups coconut milk)
1/2 pk dry instant yeast
1 tbsp baking powder
4 tbsp sugar
1 tsp ground spice
1 tsp salt
2 tbsp butter/margarine
Prep and Cooking time: 1 hr approx
1. In a large bowl add all the dry ingredients, flour, yeast, baking powder, sugar, salt, ground spice, and combine.
2. Add butter and also combine, do so until butter is evenly distributed
3. Add coconut milk to dry ingredients and combine until a medium soft dough is formed, continue to knead for approx 5 minutes. the dough may be sticky at this time but do not add any additional flour a small amount of oil may be used.
4. Rest for approx 15 mins
5. Turn out on flat surface and knead until a smooth dough is formed, let dough rest for a further five 5 minutes
6. Separate into desired size, rest for five minutes again.
7. Flatten dough out to approx 1/2 inch thick using a rolling pin, the shape all depends on the type of baking utensil you have.
8. Let rest and double in size for approx 25 mins.
9. Pre heat oven to 350 degrees and Baked for approx 25- 30 mins
Fry Plantain
2 ripe plantain
cooking oil of your choice
method:
Heat oil in pan and fry plantain for approx 2 mins on each side or until golden brown.
