Coca Cola Chocolate Cake For Two Recipe - Glen And Friends Cooking
This Coke Cake recipe is a riff on a Chocolate Buttermilk Cake recipe where we've substituted Coca Cola for a bit of caramel flavour, and replicate the acid content of the buttermilk. This isn't that famous Cracker Barrel Coca Cola Cake, or even a copycat Coca Cola cake from Cracker Barrel... But it's still an amazing moist flavourful cake.
Ingredients:
For the cake:
60 mL (¼ cup) butter, softened
90 mL (¼ cup + 2 Tbsp) sugar
1 egg yolk
2 mL (½ tsp) pure vanilla extract
125 mL (½ cup) all-purpose flour
20 mL (1 Tbsp + 1 tsp) unsweetened cocoa powder
1 mL (¼ tsp) baking soda
Pinch salt
30 mL (2 Tbsp) buttermilk
60 mL (¼ cup) Coke
For the Icing:
45 mL (3 Tbsp) butter
10 mL (2 tsp) cocoa powder
45 mL (3 Tbsp) Coke
250 mL (1 cup) icing sugar
1 mL (¼ tsp) pure vanilla extract
60 mL (¼ cup) chocolate chips
Method:
Preheat the oven to 180ºC (350ºF), and grease a 6 round cake pan.
Whisk together the flour, cocoa powder, baking soda and salt.
In another bowl, cream together the butter and sugar until fluffy.
Beat in the egg yolk then the vanilla and mix until combined.
Mix some of the Coke and buttermilk into the butter mixture, then mix in some of the flour.
Alternate until all ingredients are combined.
Scrape the batter into the cake pan, and bake for 25-30 minutes.
While the cake is baking, melt together the butter, cocoa, and chocolate chips.
As this is melting whisk in the Coke.
Once everything has melted together, remove from the heat and whisk in the icing sugar.
Set aside and allow to cool - it will thicken as it cools.
When the cake is fully baked, remove from oven and allow to cool to room temp before icing.

Moist, Decedent, full of Carrot Goodness and frost with a Pineapple Cream Cheese Frosting; and the best part, this is a Semi-Homemade Recipe but we are going to doctored it up and it will taste like you made it from Scratch!!!
Perfect Dessert for Easter Dinner or anytime of the Year!!!

Dry Ingredients
1 (15.25 oz) box spice cake mix
1 small box (3.4 oz) instant vanilla pudding mix
2 tsp ground cinnamon
Wet Ingredients
4 extra large or jumbo eggs, room temperature
1/2 cup canola or vegetable oil
2/3 cup orange juice
1 tsp pure vanilla extract
3 cups fresh carrots, peeled and finely grated
1/2 cup chopped walnuts or pecans
1/2 cup finely diced pineapple chunks
1/2 cup raisins, optional
Candied Carrot Peels, for garnish (optional)
Pineapple Cream Cheese Frosting
1 (8 oz) package cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
1 tsp pure vanilla extract
1 tsp pure pineapple extract, optional
1 (16 oz) box (1 pound) powdered sugar, sifted
1 (8 oz) can crushed pineapple, drained
Preheat Oven to 350 Degrees
In a medium or large bowl, add cake mix, vanilla pudding, and cinnamon; whisk until well combined and set aside.
In a large bowl with hand mixture, add eggs, oil, orange juice, and vanilla extract; mix on medium speed until well incorporated. Then slowly add the dry ingredients into the wet ingredients and mix until well blended. Add and fold in the carrots, walnuts (or pecans), pineapple, and raisins (if using). Pour the cake batter into 2 (9 inch) round greased cake pans, bang the pans on the counter to get rid of the air bubbles about 6-7 times. Bake for 30-35 minutes until golden brown or toothpick in the center comes out clean. Remove from the oven and cool completely on wire racks. Once the cakes are cooled, add one layer onto a cake stand; frost the top with Frosting. Then add the other cake layer, frost the top and the sides; garnish with candied carrot peels (if using). Cut them into slices, serve and enjoy!
For the Pineapple Cream Cheese Frosting
In a large bowl with hand mixer or stand mixer with paddle attachment, add cream cheese and butter; cream on medium speed until fluffy. Next add the vanilla extract and pineapple extract; mix until well incorporated. Slowly add in the powdered sugar and blend until well combined. Fold in crushed pineapple.

Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Coca-Cola® Cake. I will say upfront that this is a Southern cake, which means it's sweet. And it's delicious. It starts with a soft and moist chocolate cake that, of course, contains Coca-Cola®. Then, while the cake is still warm from the oven, a sweet chocolate frosting (that also contains Coca-Cola®) is poured on top. The finishing touch is a generous sprinkling of chopped pecans.
