-P FRISCHKNECHT (SMCD91F) 1 1/2 c Graham cracker crumbs
1 c Sugar
about
1/8 lb Butter or margarine
16 oz Neufchatel :
or cream cheese
1 c Light or regular sour cream
3 Large eggs
1 tb Grated lime peel
1/4 c Lime juice
2 tb All-purpose flour
Thin lime slices 1 c Light or regular sour cream
2 ts Sugar
2 ts Lime juice.
Mix crumbs; 2 tbs. sugar; and butter. Press over bottom and 1/2 inch up sides of a 9 inch cheesecake pan with removable rim. Bake in a 350 degree oven until lightly browned, 10 minutes. Beat cheese, sour cream, eggs, remaining sugar, peel, juice, and flour until smooth. Pour into crust. Bake in 350 degree oven until center jiggles only slightly when pan is gently shaken, 35 to 45 minutes. Cool; spread with topping. Cover and chill until cold, at least 4 hours or up to the next day. Top with lime slices and enjoy. TOPPING Mix 1 cup light or regular sour cream and 2 tsp each sugar and lime juice. That's all of the recipe folks. Ingredients:
• 2 packages of phyllo tart shells
• 1 (14 oz.) can sweetened condensed milk
• 1/2 cup fresh lime juice, plus zest from two limes
• 2 Tbsp. powdered sugar
• 4 egg yolks
• 2 cups whipped cream
• Carton of blueberries
Ready? Let’s do it!
1. Preheat oven to 375 degrees.
2. In a large bowl, whisk egg yolks until blended. Add in sweetened condensed milk, lime juice, sugar, and lime zest. Whisk together until smooth and blended.
3. Spoon batter into mini tarts so that they are nearly overflowing. Bake for about 10-12 minutes, or until custard has set. Remove and let cool to room temperature. Then top with whipped cream and blueberries.
Yield: 36 mini pies
Tip: This recipe makes a lot of custard! Feel free to use and then use the leftover custard to make a small batch of plain custard or an extra medium-sized tart. Or use 3 packages and make even more little tartlets! OR use 2 packages mini graham cracker pie crusts to make 12 mini pies.
