How To make Citrus and Pineapple Salsa
2 md Oranges, peeled, sectioned,
And chopped 1 c Fresh pineapple, chopped
1 md Jalapeno pepper, seeded and
Finely chopped 2 tb Thinly sliced green onion
1 tb Cilantro, snipped
1 ts Lime peel, shredded
Stir together oranges, pineapple, jalapeno pepper, green onion, cilantro, lime peel and dash salt in a bowl. Cover and chill for about 4 hours.

Spring is so close!! Yayyy!! This chili salmon topped with pineapple mango salsa was the perfect spring lunch today with it's bright colors and fresh flavors. And my oh my, talk about flavors!! My tastebuds just couldn't get enough! The salmon baked up so tender and flaky and that chili seasoning was a match made in heaven with that pineapple mango salsa!

We have another great recipe from Chef Michele Ragussis (you might remember her on Next Food Network Star, Chopped, and other Food Network shows). This one is for the seafood lovers. It's a deliciously bright mango and pineapple salsa that Michele served on top of some grilled Mahi Mahi, that, let's be honest, was the perfect compliment for the light buttery fish. All of it gets cooked on the grill and then basically just mixed together so it's not hard (so long as you have a grill handy).
