How To make Citrus Banana Cheesecake
CRUST:
1 c Soft whole wheat bread
Crumbs Pn Cardamom 1/4 c Artificial Brown Sugar
2 tb Margarine
FILLING:
1 Envelope Unflavored Gelatin
2 tb Artificial Sugar
2/3 c Unsweetened Grapefruit Juice
2 c Cottage Cheese
1 sm Banana
1 t Vanilla
1 sm Pink Grapefruit
4 Fresh Strawberries (Opt)
1 Crust: in a bowl combine bread crumbs, sweetener and
cardamom. With fingers,rub in margarine. Press onto bottom of 8 inch springform pan. 2 Filling: In a small dish or measure, sprinkle
gelatin over 1/4 Cup of the grapefruit juice and let stand for 5 minutes to soften. Place dish of gelatin in pan of hot water and stir until gelatin dissolves completely. Cool to room temperature. 3 In food processor or blender, combine cottage
cheese, banana, remaining juice. Puree until smooth. 4 Stir in dissolved gelatin and vanilla. Pour into
crust. 5 Cover and chill in refrigerator for 2 to 4 hours or
until set. 6 Remove sides from Pan and with wide metal lifter,
slip cheesecake off bottom of pan onto serving plate, or leave on base of springform pan. 7 Peel grapefruit, removing all white pith. Separate

Banana Pudding Cheesecake -- Lynn's Recipes - Easter
Lynn demonstrates how to make a Banana Pudding Cheesecake. This would be a perfect dessert for Easter. From Southern Living.
1-1/2 cups finely crushed vanilla wafers
½ cup chopped pecans
¼ cup butter, melted
17 vanilla wafers
2 large ripe bananas, diced
1 Tablespoon lemon juice
2 Tablespoon light brown sugar
3 (8 ounce) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
½ cup coarsely crushed vanilla wafers
Garnishes: sweetened whipped cream, vanilla waters, sliced bananas tossed in lemon juice
Preheat oven to 350°. Stir together first 3 ingredients in a small bowl until well blended. Press mixture onto bottom of a greased and floured 9 spring form pan. Stand 17 vanilla wafers around edge of pan (rounded sides against pan), pressing gently into crust to secure. Bake 10 minutes. Cool completely on a wire rack (about 30 minutes).
Combine bananas and lemon juice in a small saucepan. Stir in the brown sugar. Cook over medium-high heat, stirring occasionally, 1 minute or just until sugar has dissolved.
Beat cream cheese at medium speed with an electric mixer 3 minutes or until smooth. Gradually add granulated sugar, beating until blended. Add eggs, 1 at a time, beating just until yellow disappears after each addition. Beat in vanilla. Gently stir banana mixture into cream cheese mixture. Pour batter into prepared crust.
Bake at 350° for 45-55 minutes or until center is almost set. Remove cheesecake from oven; gently run a knife around edge of cheesecake to loosen. Sprinkle top of cheesecake with coarsely crushed waters. Cool completely on a wire rack (about 1 hour). Cover and chill 8 hours or overnight before serving.

This dessert is another variation of desserts that I think you’ll enjoy. You can serve an individual portion for more elegant, restaurant-style presentation. Today, I present you a deconstructed velvety crème banana cheesecake with rich lemon curd and sweet crispy pieces of almond crumble. You can choose whether you want to serve in a glass or on a plate. I think both looks great. On a plate, I placed the cheesecake slalom then filled the plate with other details; I have decorated with sprinkles of chocolate balls from Valrhona and finished by placing fresh green herbs on top for beautiful color contrast. For the glass version, you can make the dessert completely ready a few hours before the serving and store them in the fridge. If you are going to serve on a plate, it is best to make them just before serving. Have fun and arrange a wreath of colors, shape, textures and flavors combination.

- 60g icing sugar
- 1 cup heavy cream (cold)
- 1 tsp vanilla paste or banana extract
