How To make Cinnamon Flop Coffee Cake
1 c Brown sugar, firmly packed
1/2 ts Ground cinnamon
1/4 c Butter or margaine
2 c Sifted all-purpose flour
2 ts Baking powder
1/4 ts Salt
2 tb Shortening
1 1/2 c Sugar
1 Egg
1 ts Vanilla
1 c Milk
Combine brown sugar and cinnamon; cut in butter until crumbly and well mixed. Set aside. Sift together flour, baking powder and salt. Cream shortening in mixer bowl. Gradually beat in sugar. Add egg an vanilla; beat well. Stir in flour mixture by hand alternately with milk, starting and ending with flour mixture. Pour into greased 8" square pan. Sprinkle with brown mixture. Quarter cup salted butter (melted)
1 cup milk
7 inch cake mold

While it might look like your run-of-the-mill coffee cake at first, let us tell you, this cinnamon flop cake is so much better! If you haven’t heard of a flop cake before, it’s a spinoff of Swedish flop cake (a cream-filled, powdered sugar-topped cake) that skips the cream filling and focuses mainly on the buttery brown sugar topping. The topping is just three ingredients, brown sugar, cinnamon and butter, and you mix the brown sugar and cinnamon together, then cut in the butter to make a crumbly topping that you sprinkle over your homemade cake.

Cinnamon Coffee Cake
This video has been sitting in my repository for a few weeks now. I found a box of recipe cards that I had bought as a teenager at the back of a cupboard in my parents house. Since I spent A LOT of my pocket money on these, I'm making a conscious effort to try out different recipes. Starting with this coffee cake.
Whilst this does take a little more effort than your typical cake, it is worth it. The end product is a sweet and cinnamon cake, which is perfect for afternoon tea, accompanied with a cup of coffee or tea.

Anybody can pick up a coffee cake to bring for a brunch, but to make one from scratch? Now that is impressive! Truth is...it isn't even that hard and you probably already have the needed ingredients. This one can also be prepped the night before (if you aren't a morning person) which allows the cinnamon and sugar on top to fall through the batter creating a marble effect. I have fond memories of a family friend, Aunt Marcia, making this for get-togethers when I was growing up. Enjoy it with your morning OR afternoon coffee.
