1.5 pounds ground pork (fatty is best, or use ground beef or other ground meats)
2 tablespoons paprika
1 tablespoon cayenne
1 tablespoon ancho powder
1 tablespoon guajillo powder
1 tablespoon garlic powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon coriander
1/2 teaspoon Mexican cinnamon
1/2 teaspoon ground clove

Thank you for watching my Mexican Chorizo Sausage video. On this video, I made the traditional flavors of Mexican chorizo but made it into a sausage. Traditional Mexican chorizo has very little texture as it has a ton of fat, I wanted the flavors of chorizo but I also wanted to make it into a sausage you can enjoy on a bun like a traditional sausage.

4 potatoes ( 410 g) (peeled and cubed)
2 Tbsp (30 ml) cooking oil
pinch of salt
1/4 cup (60 ml) water

Chorizo Con Papas Recipe
CHORIZO - Spicy Mexican Sausage
Chorizo 2 Ways - Spicy Mexican Sausage With Eggs or Potatoes = Perfect Breakfast Burittos. Or if you are CARB-Watching skip the tortilla and have it in a bowl. Chorizo is a spicy Mexican Sausage that is high in fat, but it has almost NO CARBS! So, if you eat Chorizo and Eggs in a bowl you are EATING PROTEIN-STYLE.
Here are the Ingredients & Recipes:
Use 1- 2.5 Oz. Case or Roll of Chorizo for both Recipes
2 Eggs
1 Large Potato (you can peel or just wash really well) Slice or cut in cubes
For Chorizo & Eggs use half the roll
Cook Chorizo in a non-stick pan
Add 2 eggs
Stir well
Thoroughly cook
For Chorizo & Potatoes:
Prep Potato the way you like em ( I like slices and the peel left on)
Fry potatoes in oil
Place remaining roll of Chorizo on tops of partially cooked potatoes
Cover and let em steam
Lift the cover and mix well
Continue to cook until potatoes are soft
Serve on tortillas or in a bowl
