How To make Chocolate Tofu Cake
Light vegetable oil spray 8 oz Firm tofu
1/4 c Part skim milk ricotta chees
4 oz Light cream cheese
1/4 c Pure maple syrup
3 tb Cocoa powder, unsweetened
2 lg Egg whites
1 tb Ground cinnamon
3 tb Light Irish cream liqueur
1 tb Coffee liqueur
FOR THE TOPPING:
1/2 c Nonfat sour cream or plain
-nonfat yogurt 1 ts Pure vanilla extract
1 tb Honey
Preheat the oven to 350 degrees. Coat a 10-inch glass pie plate with 3 sprays of the vegetable oil. In the bowl of a food processor, combine the tofu, ricotta cheese, cream cheese, maple syrup, cocoa powder, egg whites, cinnamon, and the liqueurs. Puree until smooth and pour into the prepared pie plate. Place the pie plate on the center rack of the oven. On the bottom rack, place a baking pan filled halfway with water. Bake for 1 hour. While the cake is baking, combine all the topping ingredients in a small bowl and whisk thoroughly. When the cake has cooked for an hour, remove it from the oven, spread the topping on evenly, decorate if you wish, and return it to the oven. Bake for about 10 minutes more, until the topping sets. Refrigerate for 2 hours before serving. Decorate with the Chocolate Sauce Design if you wish. Making a Chocolate Sauce Design: Put a mixture of 2 tablespoons pure maple syrup and 2 tablespoons unsweetened cocoa powder into a squeeze bottle or an improvised pastry bag, which can be made by forcing the sauce into a bottom corner of a sturdy plastic storage bag and pricking a small hole throught which it can flow. Squeeze a series of straight lines across the cake, then rake the tines of a fork across the top in the opposite direction to create a pattern.

INGREDIENTS (16 slice cake)
300 g silken tofu
1 ½ cups wholemeal flour
1 cup unsweetened cacao
1 ½ tsp baking soda
1 ½ tsp baking powder
1/3 cup natvia (Stevia)
¼ tsp salt
4 tbsp avocado oil
1 cup soy milk or any nut milk
1/3 cup boiling water

METHOD
Pre – heat the oven 180 C / 350 F.
Prepare a bundt cake tin with vegan butter and flour.
In a medium bowl - sift the wholemeal flour, unsweetened cacao, baking soda and baking powder.
In a blender – blend the tofu until smooth and creamy.
Add the creamy tofu, oil, natvia sweetener, salt and hot water into the dry ingredients.
Stir it until well combined together and then transfer the batter into the prepared bundt cake tin.
Bake for 30-35 minutes or until a tooth pick comes out clean.
Remove from the oven and leave the cake in the tin for about 10 minutes. Then remove to a cooling rack.

1/2 cup coconut cream
80 g vegan dark chocolate, chopped
1 tbsp agave
METHOD
Heat the coconut milk in the microwave for 40 second then add the dark chocolate.
Stir it until smooth and add the agave and stir it to combine together.

400 grams of tofu

Chocolate Mousse Cake | Gluten Free Vegan Desserts
For All Gluten Free Vegan Dessert Lovers :)
This Vegan Chocolate Mousse Cake is insanely decadent! This Chocolate Mousse Cake may taste like a rich dessert indulgence but it's made from just a few healthy whole-food ingredients.
This super creamy vegan chocolate mousse cake is indulgent and light all at once. The filling has a silky smooth texture that will melt in your mouth, it's no-bake and doesn't use coconut milk.
Ingredients
*1cup=240ml, 1Tbsp=15ml
*No Substitution Suggestions Unless Specified.
CRUST (6-inch)
• ¾ cup walnuts & hazelnuts
• ½ cup desiccated coconut
• 2 Tbsp cacao powder
• 2 Tbsp melted coconut oil
• 50g pitted dates
• Pinch sea salt
FILLING
• 300 g (2 cups) vegan dark chocolate – I used 54%
• 300 g silken tofu
(it gives this cake a creamy & silky texture, and don’t worry you won’t be able to taste it at all!)
• 150 g vegan yogurt
• 2 Tbsp cacao powder
• 1 tsp vanilla extract
• Pinch sea salt
• (2-3 Tbsp maple syrup if needed)
INSTRUCTIONS
1. Line the bottom and sides of a 6-inch cake pan with removable base with some parchment paper.
2. Add all ingredients for the crust to a food processor and process until evenly mixed. Press the mixture into the base of the cake pan, and smooth it out with a spatula. Set aside in the fridge.
3. Melt the chocolate over a double boiler.
4. Add all of the ingredients apart from the maple syrup to a blender or food processor and blend for a couple of minutes until smooth and creamy.
5. Taste the filling and add the maple syrup if you'd like it sweeter and blend again to combine.
6. Transfer the filling into the cake pan using a spatula to smooth it out. Place in the fridge to set for 3-4 hours (or overnight if preferred).
7. Once set, remove the cake from the pan.
8. To store, place in an airtight container and refrigerate for up to 3 days.

Well well well, anyone remember those Aero mousse yogurts you had as kids? I think I’ve just recreated a homemade vegan slightly high in protein version- YIPPEE! These are so easy to make all you need is a blender – I can’t stop making this recipe and I have a few epic variations coming soon!

TOFU CHOCOLATE CAKE
- 8 graham crackers (60 g of crackers)
- 4 tbsp (60 g) melted butter (or coconut oil for)
- 0.5-1 tbsp (7.5-15 ml) vanilla extract
- 0-2.5 tbsp (0-40 ml) milk - I used homemade almond milk to make it lighter, but for myself, I make this cake without any milk
- 2 cups (180 g) dark chocolate
- 8 oz (180 g) tofu
- Pinch of salt
- 0.5-1 tbsp (7.5-15 g) syrup - I used agave
1. Preheat the oven to 360 F (180 C)
2. Break the crackers into small, but chunky pieces
3. Melt the butter or coconut oil
4. Mix the crackers with the melted butter. If you have some leftover shredded almonds use about a tbsp (15 ml) of it and mix it in
5. Use parchment paper in the cake mold or butter the inner sides of the mold
6. Flatten the crackers in the mold and put in in the oven for 10 minutes
7. Melt the chocolate
8. Place everything in a food processor and mix till smooth
9. Pour the chocolate mix onto the cooled down cake base, decorate with fruits, and place in the fridge for at least 2 hours
*In the video I used a 16 cm (6.3 in) cake mold
**I make these cakes at home for myself with NO milk, NO, sweetener, and NO vanilla. This way the cake is very dense, like chocolate truffles, and more bitter like dark chocolate. So feel free to experiment with it.

TOFU CSOKITORTA
- 60 g háztartási keksz (16 db)
- 60 g olvasztott margarin (vagy kókuszolaj)
- 1-2 evőkanál vanília aroma
- 40 ml tej - házi mandulatejet használtam
- 180 g étcsokoládé
- 180 g tofu
- Csipet só
- 1-2 evőkanál szirup - agavét használtam
1. Melegítsd elő a sütőt 180 fokra
2. Törd a kekszet apró, de még ropogós darabokra
3. Olvaszd meg a vajat vagy a kókuszolajat
4. Keverd össze a kekszet az olvasztott vajjal, vagy kókuszolajjal. Ha van maradék aprított mandulád, használj kb. 15 ml-t belőle, és keverd a mixbe
5. Használj sütőpapírt a tortaformában, vagy margarinozd meg a forma belső oldalait
6. Egyengesd el a kekszet a formában, és tedd a sütőbe 10 percre
7. Olvaszd meg a csokoládét
8. Tegyél mindent a robotgépbe, és keverd simára
9. Öntsd a csokoládékeveréket a kihűlt tortaalapra, díszítsd gyümölcsökkel, és tedd a hűtőbe legalább 2 órára

** Ezt a tortát otthon magamnak vanília, tej és édesítő nélkül készítem. Így a torta nagyon sűrű, mint a csokoládé trüffel, és keserűbb, mint az étcsokoládé. Tehát nyugodtan kísérletezz vele.
