How To make Chocolate Shortcakes
2 c Flour, all purpose
1/2 c Sugar, granulated
1/3 c Cocoa powder, unsweetened
1 tb Baking powder
1 ts Baking soda
1/2 c Butter or margarine, cold
1 c Buttermilk OR plain low-fat
Yogurt 2 ts Sugar
Heat oven to 375 degrees. Grease 2 cookie sheets. In a large bowl mix flour, granulated sugar, cocoa powder, baking powder and baking soda. Cut butter in pieces. With pastry blender or 2 knives cut butter into flour mixture until coarse crumbs form. with a fork stir in buttermilk or yogurt until mixture clumps together. Divide in half. Put each on a cookie sheet in a 6-inch round. Sprinkle each with sugar. Bake one at a time 20 minutes until pick inserted in center comes out clean. cool on sheet on rack 5 minutes before removing to rack to cool completely. To Make Strawberry Shortcake: Not more than 2 hours before serving. Layer with cream and berries. Top with cream. Garnish with a whole berry. Just before serving pour on chocolate topping.

MEASURING CUPS:
Makes 14 large cookies or 16-18 medium sized
Ingredients:
1/2 cup (100g) Brown sugar, packed
1/4 cup (50g) White sugar
1/2 cup (115g) Unsalted butter, softened
1 large Egg
2 teaspoons Vanilla extract
1½ (190g) All-purpose flour
3/4 teaspoon Baking soda
1/2 teaspoon Salt
1 cup (160g) Chocolate chips or less if you prefer
Directions:
1. In a large bowl, beat softened butter, brown sugar and white sugar. Beat until creamy, about 2 minutes.
2. Add egg, vanilla extract and beat until combined, scrape the bottom and sides as needed.
3. In a separate bowl mix flour, baking soda and salt.
4. Add flour mixture into the butter mixture. 1/2 at the time, mix until combined.
5. Stir in chocolate chips.
6. At this stage if dough is too soft, cover and refrigerate for 20 minutes.
7. Preheat oven to 350°F (175°C). line two baking trays with parchment paper.
8. Scoop the dough onto a prepared baking sheet, leaving at least 3 inches (7.5 cm) of space between the cookies.
9. Refrigerate for 30-40 minutes.
10. Bake for 10-12 minutes, or until slightly golden around the edges.
11. Allow to cool before serving.

1 cup powdered/icing sugar (120 grams)
1/2 cup cocoa (unsweetened) (50 grams)

This is Alison Roman's recipe from her new cookbook Dining in. The moment that I saw these cookies take the internet by storm, I jumped on the cookie bandwagon and tried them out. Lucky for you, Alison let me share the recipe with you! One of the many beautys of these cookies, is that they are the perfect make-ahead cookie of all time. Make the dough, roll it up, and either refrigerate it a few days ahead of baking time, or freeze it for up to a month. All you have to do is pull them out of the fridge, slice them, and bake them. Ingredients you'll need:
1 cup plus 2 tablespoons cold salted butter
1/2 cup white sugar
1/4 cup light brown sugar (dark brown is fine too)
1 teaspoon vanilla extract
2 1/4 cup all purpose flour
6 ounces semi-sweet or dark chocolate (I used 60 percent dark chocolate)
1 large beaten egg (for brushing)
demarara sugar (for rolling)
flakey sea salt (for finishing the cookies)

Cake Recipe:
2 cups flour
2 cups sugar
3/4 cup natural unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
2 large eggs
1 cup buttermilk
1 cup vegetable oil
1 1/2 tsp vanilla
1 cup hot water (I used 1 cup of Hot Black Coffee instead)
1. Prepare three 8 inch cake pans with parchment paper circles in the bottom, and grease the sides. Preheat oven to 300°F (148°C).
2. Add all dry ingredients to a large bowl and whisk together.
3. Add eggs, buttermilk and vegetable oil to the dry ingredients and mix well.
4. Add vanilla to boiling water (or boiling coffee) and add to mixture. Mix well.
5. Divide batter evenly between cakes pans and bake for 30-33 minutes, or until a toothpick comes out with a few crumbs.
6. Remove cakes from oven and allow to cool for about 10 minutes, then remove to cooling racks to cool completely.

Ingredients
3 Cups Heavy whipping cream
3/4 Cup Powdered sugar
2 tsp Vanilla extract
1 Tbsp Gelatin Or 1 packet
3 Tbsp Water
1. In a small bowl, bloom the gelatin with the water. Heat for about 10 sec in the microwave to melt. Set aside briefly. Add a couple tablespoons of cream in and mix well.
2. In a mixing bowl, add the rest of the heavy whipping cream, powdered sugar and vanilla extract. Whip on medium speed until soft peaks form. At this point continue to whip while streaming in the gelatin.
3. Continue on medium speed and whip until stiff peaks form.
4. Immediately use or store in an airtight container for up to 3 days.
I used a 16 oz container of strawberries...
