2 1/2 c Oatmeal
2 c Sugar
1 Melted butter
1/2 c Smooth peanut butter
4 tb Cocoa
1 ts Vanilla
1/2 c Milk
Recipe by: RANDY KNOPP (DYZP50A) In medium size sauce pan, mix butter, sugar, cocoa and milk, stir in over medium heat. Bring to a full boil for 3 to 4 minutes(trying for almost a fudge consistency), Then stir in peanut butter and vanilla...last stir in oatmeal! You have to work quickly as will harden rather soon. Scoop onto aluminum foil about 1 tblsp per cookie......let cool and harden and you have the ultimate sugar Fix!JMI guess I cook a little of everything, nothing very fancy, but I guess my claim to fame with friends and family would have to be "Chocolate Oatmeal Cookies".If your watching your calories you won't want to try this one! -----

Makes 24-28 cookies
Ingredients:
1/2 cup (115g) Butter
1/2 cup (120ml) Milk
1/2 cup (125g) Peanut butter or any kind of nut butter
1/4 cup (30g) Cocoa powder
1¼ cups (250g) White sugar
1/4 cup (50g) Brown sugar
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1½ cups (135g) Rolled oats
1½ cups (120g) Quick oats
Directions:
1. Line two baking sheets with parchment paper and set aside.
2. In a large saucepan, combine butter, milk, sugar and cocoa powder. Set over medium heat, cook stirring frequently until it reaches a full boil. Boil for 60 seconds.
3. Remove from heat, immediately add oats, peanut butter and vanilla extract, stir until combined.
4. Using a cookie scoop or two spoons drop mixture onto lined baking sheets.
5. Let stand at room temperature until set, about 1-2 hours.
Notes:
• You can use rolled oats, quick oats or combination of both.
• Store cookies in an airtight container at room temperature up to 3-4 days and for up to a week in the refrigerator.
• The one minute of boiling is important. If you don’t boil for one minute, your cookies may not set up.
• Sometimes the cookies come out a little soft, in this case, boil for another 10-20 seconds. Do not boil the mixture over 90 seconds, it will make the cookies too dry.

No bake cookies are one of the easiest cookie recipes you can make. They're a blend of 7 simple ingredients and no flour or eggs are needed! Just boil everything in a pot, scoop it out onto a baking sheet, and let it cool.
A combination of sugar, milk, butter, chocolate, oatmeal, almond butter and vanilla extract, they come together fast! No bake cookies are a classic and while they should be easy and foolproof, it seems many still run into issues when making them (i.e. too soft and gooey or too hard and crumbly). INGREDIENTS
- 1 1/2 cups sugar
- 1 cup butter, room temperature
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cups flour
- 1/3 cup cocoa
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups rolled oats
- 6 ounces chocolate chips
INSTRUCTIONS
In the bowl of an electric mixer, cream the butter and sugar until light and fluffy. This usually takes longer than one may think, about 3 minutes. Add egg and vanilla and beat to incorporate.
In a separate bowl, sift flour, cocoa, baking soda, baking powder, and salt. Add dry ingredients to the creamed mixture. Do not over-beat, only until just mixed in.
Add rolled oats. You may need to fold these in by hand as the dough becomes quite stiff and could be too thick for some mixers. Last, fold in chocolate chips.
Using a cookie scoop or a spoon, make approximately 1 1/2 tablespoon-size cookies and place on parchment-lined cookie sheets. Bake in a preheated 350-degree oven for 10-12 minutes. While baking, the color will not change. Watch for the edges to be just set and for the centers to remain soft.
Remove from oven and let finish baking and cool on pan for 5 minutes. Remove from pan and cool completely on rack.
