How To make Chocolate Decadence Cheesecake
CAKE:
8 oz Bittersweet or semi-sweet
Chocolate 1 lb Cream cheese
3/4 c Sugar
4 Eggs
1 ts Vanilla extract
1 1/2 c Sour cream
WHIPPED CREAM TOPPING:
1/2 c Heavy Cream
1 T Sugar
1/4 c Sour cream
1 T Kahlua
Chocolate curls for garnish Place chocolate in the top of a double boiler and melt over hot water, or place in a microwaveable bowl and microwave on medium for 2 to 3 minutes or until melted. Let cool. In a mixer, place the cheese and sugar and mix until blended. Add eggs and vanilla and mix until smooth. Blend in chocolate and sour cream. Pour into a greased 9-inch springform pan. Bake in the middle of a preheated 300F oven for 35 minutes or until the outer edge is set and the inner centre is still glossy. Turn off the oven, leave the door ajar, and let cool in the oven for 1 hour longer. Chill. When completely cooled, and ready to serve, remove pan sides. Prepare whipped cream topping; in a small bowl, whip cream until stiff peaks form and beat in sugar, sour cream and liquer. Spoon in a ring around top of cheesecake and sprinkle with chocolate curls. Japanese Cheesecake is by far one of my favorite cheesecakes I’ve ever done. This chocolate Japanese Cheesecake is totally irresistible, light, fluffy and chocolaty, with a moist texture resembling a souffle. What makes this Chocolate Japanese Cheesecake so delightful is the fact that egg whites are whipped and incorporated into the cheesecake mixture making this cheesecake rise in the oven like a souffle, resulting in this cloudy, fluffy texture.

Ingredients
Makes about 8-10 servings
6 eggs, separated
9 oz (250g) cream cheese, room temperature
3 1/2 tbsp (50g) butter, room temperature
3.5 fl oz (100ml) milk
1 tsp (5g) vanilla extract
¼ cup (30g) flour
¼ cup (30g) unsweetened cocoa powder
2 1/2 tbsp (20g) cornstarch
1/2 tsp (2g) salt
¾ cup (150g) sugar

or biscuits
-40g / 1.5oz sugar
-70g / 2.5oz Butter

for a 10 inch pan.
-1k / 35oz Cream Cheese
-275g / 10oz Sugar
-1/4 TSP salt
-180g / 6.3oz Creme Fraiche or
sour cream
-3 TSP Vanilla
- half a lemon
-6 Eggs, add last!
-Oven 180C / 350F 10 min
-lower to 150C / 300F for 40min
