GRAHAM CRACKER CRUST
▪375g (3 8-packs) GRAHAM CRACKERS
▪110g or 1c walnuts, toasted
▪40g or 1/4c sugar
▪3g or 2/3tsp salt
▪30g or 1/4c flour
▪170g (1.5 sticks) butter, melted
Add ingredients except for butter to a food processor and spin until broken down into a sandy texture. Drizzle in butter while spinning. When ready, it should be able to hold itself together when you squeeze it. If it’s still crumbly, spin in a bit more butter.
Spread into a greased 9” springform pan by pressing 50-60% of the graham cracker mixture evenly against the sides. See video @2:10 for method. Add remaining crumbs into the pan and press into an even layer on the bottom of the pan.
Par bake at 350F/175C for 10 minutes

CHEESECAKE FILLING
▪900g/4 blocks cream cheese, room temperature
▪225g/8oz goat cheese, room temp
▪240g or 1c sugar
▪5g or 1tsp salt
▪30g or 1/4c corn starch
▪125g or 1/2c sour cream
▪Zest of 1 lemon
▪5g or 1tsp vanilla extract
▪5 whole large eggs + 2 yolks
Mix cream cheese, goat cheese, sugar, salt, and corn starch using paddle attachment on medium speed, scraping sides of bowl after about 30 seconds. Mix for another minute or so until well combined. Add in sour cream, lemon zest, and vanilla and continue to mix for another minute until combined. Scrape paddle and bowl well. With mixer on medium, add eggs, 1 at a time, mixing until just combined, scraping sides halfway through. Careful not to over mix/whip after the eggs are added.
Pour mixture into fully cooled crust shell.
Bake at 325F/160C for 60 minutes. At this point, the cheesecake should have risen and still be jiggly in the center. Turn off oven and allow to cool in the oven, door closed for 45 minutes. Remove from the oven and allow to come to room temperature. Tent with foil and refrigerate for at least 10 hours.

CHERRY TOPPING
▪350g/12oz Frozen Dark Cherries (i’m using unsweetened frozen)
▪Pinch salt
▪150g or 2/3c sugar
▪1 lemon, zest and juice
Add cherries, salt, sugar, zest and juice of lemon to a saute pan over high heat. Bring to a boil and allow mixture to cook down for 5-6 minutes until syrupy. When done, temp should be around 225F/105C. Remove from heat and transfer to a bowl to cool. Refrigerate until ready to use.

BETH'S NO-BAKE CHOCOLATE CHEESECAKE MOUSSE RECIPE
Serve 6
INGREDIENTS:
2 cups (475 ml) heavy cream or whipping cream
½ cup (50 g) unsweetened cocoa powder
¾ cup (75 g) powdered sugar
8 oz (230g) whipped cream cheese or regular brick cream cheese will work too
¼ cup (25 g) powdered sugar
1 tsp (5 ml) vanilla
Garnish:
5-6 plain chocolate wafer cookies
METHOD:
In an electric mixer whip together the heavy cream, unsweetened cocoa powder and sugar until stiff peaks form.
Then transfer to a bowl and set aside.
Then don’t even bother to clean out your mixing bowl. This is what makes this so easy!
Then beat the cream cheese until soft, slowly add the powdered sugar, in stages, mixing in-between additions. Once combined, add the vanilla and beat to combine.
The remove the bowl from your mixer, and fold in the cream cheese mixture into to the chocolate whipped cream mixture, combining the two well.
Transfer to a pastry bag, fitted with a Wilton 2D tip, and pipe mousse into your serving glasses. Refrigerate until chilled.
Put cookies into Ziploc bag and crush with a rolling pin until fine crumbs form. Top each mousse with a sprinkle of crushed cookie crumbs and serve!

Ingredients
For Crust:
7 oz chocolate cookies, no fillings, preferably Oreo, crumbled finely
¼ cup unsalted butter, at room temperature
For Filling:
2 cups cream cheese, at room temperature
9 oz dark chocolate bars, shaved
1 cup heavy cream, chilled
⅔ cup powdered sugar
1 tsp rum, brandy, whiskey, or bourbon
For Ganache:
5 oz dark chocolate bars, shaved
½ cup heavy cream
For Garnish:
¼ cup cocoa powder

Crust:
0:08 Combine the cookie crumbs and butter in a bowl. Mix until evenly incorporated.
0:27 Press this mixture into the bottom of an 8-inch springform cake tin. Transfer to a chilled area to firm up while making the filling for 1 hour.
Filling:
0:41 Prepare a pot with boiling water.
0:44 In a heat proof mixing bowl, add the chocolates and place on top of the boiling water. Whisk until chocolates have completely melted. Set aside in a warm area.
0:58 In a large chilled mixing bowl, add heavy cream and whip until medium peaks. Cover and set aside in a chilled area.
1:20 In another large mixing bowl, mix together cream cheese and powdered sugar until fluffy and pale.
1:37 Add melted chocolate and liqueur of your choice. Continue creaming until combined and smooth.
1:52 Gradually fold in the whipped cream into the cream cheese mixture until evenly incorporated.
2:14 Pour the filling into the pan. Transfer to the chiller and allow to firm up, roughly 2 to 3 hours.
Ganache:
2:35 In a sauce pot, bring the heavy cream to a simmer.
2:47 Remove from the heat and add the chocolate. Whisk until smooth and chocolates have melted.
3:00 Pour the ganache on top of the firm filling of the cheesecake. Transfer the cheesecake to a chilled area and allow to firm up, roughly 6 hours and preferably overnight.
3:18 When ready to portion, lightly heat up the springform lid using a kitchen torch and slowly release.
Garnish:
3:26 Dust the entire cheesecake with cocoa powder, and portion accordingly. You may need to chill the cheesecake at intervals while portioning.
3:34 Serve with sour cream or yoghurt on the side.
