Ingredients:
- 100 grams of butter
- 1/4 teaspoon salt
- 70 grams of sugar (1/3 cup)
- 1 egg
- 30 grams of cocoa powder (3 tablespoons)
- 20 grams of corn starch (2 tbsp)
- 180 grams of wheat flour (1 cup)
- 1 teaspoon baking powder
Filling:
- 70 grams of coconut flakes (2/3 cup)
- 4 tablespoons of condensed milk
Additionally:
- 30 grams of dark chocolate
Bake in preheated 350°F (180°C) oven / 15 minutes.

Chocolate coconut cookies recipe | 12 days of EASY Christmas cookies (Day 2)
Today’s easy cookie recipe is for irresistibly chewy chocolate coconut cookies, the second easy cookie in our 12 days of Christmas cookies 2021 series! These chocolate coconut cookies have a wonderful chewy texture and a rich fudgy flavour with the perfect balance of coconut! These chocolate coconut cookies are sure to be come a Christmas favourite, but are delicious year round! Follow along with our short chocolate coconut cookie recipe video and learn how to make these easy coconut cookies!
Chewy Chocolate Coconut Cookie Recipe:
Ingredients:
1/2 cup butter (softened) 113g
1/3 cup packed brown sugar 60g
1/3 cup white granulated sugar 65g
1/2 teaspoon coconut extract 2g
1 large egg 50-60g
1/4 teaspoon sea salt 1g
1/2 teaspoon baking soda 2g
1 cup all purpose flour 130g
1/4 cup cocoa powder 30g
1 cup shredded sweetened coconut 90g
Directions:
Preheat your oven to 350F/175C. Line cookie sheets with parchment paper. In a medium bowl combine flour, cocoa, salt and baking powder. Whisk until combined. In a large bowl using a whisk or hand mixer (or the bowl of a stand mixer fitted with the paddle attachment) mix melted butter and both brown and white sugar and until well incorporated, around 2 minutes. Add the egg and coconut extract and continue mixing on low until the mixture is light in texture and pale in colour. Gradually add in the dry mixture, mixing between each addition. Lastly add the shredded coconut and mix until just combined. Using a 1.5 Tbs cookie scoop or a rounded heaping tablespoon drop the cookies onto the parchment lined sheets, allow room for spreading. Bake for 8-10 minutes. Allow the cookies to cool on the pan for a couple minutes and then move to a wire rack to finish cooling completely! This recipe makes approximately 18 chocolate coconut cookies. These cookies can be kept at room temperature for 3 days, 5 days refrigerated and can also be frozen!
Freezing instructions:
a. You can freeze your baked cookies in a freezer tight bag or container for up to 30 days. Allow to thaw for 1 hour.
b. Freeze your unbaked cookie dough balls. Place on a pan or plate and freeze for 30 minutes. Transfer to a freezer tight bag or container. These can be frozen for up to 2 months. Remove from the freezer 30 minutes before baking. Bake as indicated above.

Seriously, you cannot beat the ease of this recipe! It takes less than 10 minutes of prep time to come together, about 30 minutes in the oven, and the hardest part is just waiting for them to cool off so you can slice and bite into them.
These chocolate coconut bars are very similar to Magic bars or bars known as hello Dolly bars. The difference? These are not cloyingly sweet. They have just the right amount of sweet, buttery, salty goodness. It's an old-fashioned, retro recipe made perfect for modern-day tastebuds.
Here's what you'll need for these Coconut Magic Cookie Bars with Chocolate Chips:
1 ½ cup fine graham cracker crumbs
½ cup + 2 tablespoons unsalted butter, melted
¾ teaspoon fine sea salt, separated
1 (14 ounce) can sweetened condensed milk (not to be confused with evaporated milk)
1 cup semi-sweet chocolate chips
¾ cup unsweetened coconut flakes
How to make Coconut Magic Cookie Bars:
Preheat the oven to 350° and prepare a greased 8x8 baking dish.
In a small mixing bowl, stir together graham cracker crumbs, melted butter, and a ½ teaspoon salt. Transfer to the baking dish and press firmly across the bottom.
Pour the can of sweetened condensed milk over the crust and sprinkle a ¼ teaspoon of salt across the top.
Scatter chocolate chips across the dish, followed by the coconut. Use the tines of a fork to gently press the toppings into the condensed milk.
Bake for 28-30 minutes, until the coconut is tinging golden-brown across the top. Remove from the oven and run a sharp knife along the edges of the dish.
Allow to cool completely -- 30 minutes to 1 hour. Cut into 12 bars or 16 squares, serve and enjoy!
