How To make Chocolate Cinnamon Cake Roll
3 Eggs; Lg
1 c Sugar
1/3 c Water
1 t Coffee-Flavored Liqueur
3/4 c Unbleached Flour; OR
1 c Cake Flour
1/4 c Cocoa
1 t Baking Powder
1/4 t Salt
Cocoa 2 tb Coffee-Flavored Liqueur
1 c Whipping Cream; Chilled
3 tb Powdered Sugar
1 tb Coffee-Flavored Liqueur
1 t Cinnamon Ground

CINNAMON WHIPPED CREAM:
Heat the oven to 375 degrees F. Line a jelly roll pan, 15 1/2 X 10 1/2 X 1 inch with aluminum foil or waxed paper, grease generously. Beat the eggs in a small mixer bowl, on high speed, until thick and lemon colored, about 5 minutes; pour into a larger mixer bowl. Gradually beat in the sugar. Beat in the water and 1 tsp of liqueur on low speed. Gradually add the flour, 1/4 cup of cocoa, the baking powder and salt, beating just until the batter is smooth. Pour into the jelly roll pan. Bake until a wooden pick inserted in the center comes out clean, about 12 to 15 minutes. Immediately loosen cake from the edges of the pan; invert on a towel sprinkled generously with cocoa. Carefully remove the foil. Trim off the stiff edges of cake if necessary. While hot, carefully roll the cake and towel up, together, from the narrow end. Cool on a wire rack at least 30 minutes. Unroll the cake; remove the towel. Sprinkle 2 tb of the liqueur over the cake spread with Cinnamon Whipped Cream; roll up. Sprinkle with cocoa, if desired and refrigerate until serving time. CINNAMON WHIPPED CREAM: Beat all of the ingredients in a chilled bowl until stiff.

1/2 teaspoon baking soda (2.5 grams)
¼ teaspoon salt (2 grams)
1 cup sour milk (to make sour milk add 1 tablespoon lemon juice or white vinegar to 1 cup measure and top off with milk, let sit for about 10 - 15 minutes) (245 grams)
1 teaspoon vanilla (5 ml)

4 tsp baking powder
1/4 tsp salt
1 1/2 cups milk
2 tsp vanilla extract
2 eggs
1/4 cup melted butter
1 cup soft butter
1 cup packed brown sugar
2 TBSP flour
1 TBSP cinnamon
13x9 baking dish or pan
350°F 25-30 minutes or until done. Some went up to 40 min. It all depends on the heat of your oven.

Easy Sushi Cake Recipe!
Ingredients:
1. 4 Cups Plain flour
2. 2½ tsp Instant Yeast
3. 1 Cup Milk
4. 1 Cup Chocolate Chips (Your Preference)
5. 2 Eggs
6. ½ Cup Sugar
7. 2 Tbsp Cinnamon powder
8. 2 Tsp Nutmeg Powder
9. 1 Cup Brown Sugar
10. 2/3 Cup Melted Butter
11. 2 Tbsp Softened Butter (To Spread on Dough)
12. 1 Tbsp Salt
13. 1 Tsp Vanilla Essence
14. 1 Cup of Heavy Cream
Recipe:
Add ½ a cup of sugar to warm milk, stir and add yeast. Set aside for 5mins till it is foamy/bubbly (yeast is active).
Stir mixture and add in melted butter, eggs, salt & vanilla essence. Mix well.
Add flour gradually and combine mixture into a soft dough.
Remove dough and place it on a floured board. Knead for 5 mins or until it is smooth. (Constantly dust flour on hands and workboard to prevent sticking).
Place the dough back into the floured bowl, cover with a cloth and let it rise for about 60mins. It should double in size.
For the filling, mix 1 cup of brown sugar, 2 tbsp of cinnamon powder & 2 tsp of nutmeg powder into a bowl & mix well.
When dough is ready, punch down/flatten with floured hands and place it on your floured working top.
Flatten dough into a rectangle and slather the softened butter over the surface (this will help keep the fillings in place).
Roll up evenly and cut them into equal sizes. Place them in a oiled bake-tray for another 30 mins to rise.
Bake them at 120°C for 10mins, then remove and pour heavy cream onto the surface.
Bake for another 30 to 40 mins at 120°C, or until brown.

1 c (227g) milk
2 1/4 tsp (7g) instant yeast
2 eggs
1/3 c (67g) sugar
1 tsp (6g) salt
4 oz (113g) butter, softened
4 1/4 c (595g) AP flour
cinnamon filling:
4 oz (113g) butter
3/4 c (160g) brown sugar
2 tbsp cinnamon
1 tsp salt
chocolate filling:
1 c (113g) powdered sugar
3/4c (63g) cocoa powder
1/4 c (50g) vegetable oil
1/4 c (57g) water
pour 1/2 c (113g) warm cream over the rolls before baking. bake at 350F for 30-35 min or until golden

No-Knead Cherry & Chocolate Brioche Recipe
Brioche is one of my favourite doughs to work with. It is extremely simple to make and it’s super versatile and that is why I keep coming back to it. The brioche playlist on my channel is full of different recipes savoury and sweet. Sweet ones are usually the more popular ones, so I decided to make this cherry and chocolate filled loaf.
I saw a similar recipe on the King Arthur Baking website and thought I could adapt it to my style and turn it into a nice sliceable loaf. Once again, my USA Pan Pullman tin came in handy. It’s been used quite a lot in the last few months and for good reason. It is one of my favourite pieces of baking equipment. You can use a regular 2lb (900g) tin for this recipe.
