You can never go wrong with Chocolate cake!
Well, here’s a chocolate cake anyone can make with a slight twist….
A must try for all Zucchini lovers as well as Zucchini haters!
The nutritious value of a zucchini combined with yummy taste of the chocolate gives us the best of both worlds
INGREDIENTS:
1/2 cup/1 stick melted butter, plus more for pan
1/2 cup unsweetened cocoa powder, plus more for pan
1 1/4 cup all-purpose flour or mixture of 1 cup Whole wheat flour and 1/4 cup All Purpose flour (Maida)
1 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. salt
1 cup sugar or mixture of 1/2 cup jaggery and 1/2 cup sugar
1 large egg
1 large egg yolk
1 tsp. pure vanilla extract
2 cup grated zucchini
2/3 cup chocolate chips
DIRECTIONS:
1. Preheat oven to 180°C.
2. Butter a 9x5 loaf pan and dust with cocoa powder, tapping out any excess.
3. In a large bowl, whisk together flour, cocoa powder, baking soda, cinnamon, and salt.
4. In another large bowl, stir together sugar, egg, and egg yolk until smooth.
5. Add melted butter and vanilla and mix until smooth, then fold in zucchini.
6. Gradually add flour mixture, then fold in chocolate chips.
7. Transfer batter to prepared pan. Bake until a toothpick inserted into center comes out clean, about 50 minutes.
8. Let bread cool in pan for about 10 minutes, then invert onto a wire rack to cool completely.
9. Slice, serve and enjoy!
