whole almonds with skin: 50g
whole almonds without skin: 50g
sugar (or granulated sugar): 80g
Powdered sugar: 50g
Cocoa powder: 12g
Baking powder: 1g
Egg white: 22g
Almond essence: about 10-15 sprinkles
| How to make
Roast the two kinds of almonds in the oven at 160℃ for 8-10 minutes.
Put the two kinds of almonds and granulated sugar into a food processor to make a powder.
Mix in the powdered sugar and cocoa powder and sift twice.
Add the egg whites and almond essence and mix thoroughly with a rubber spatula.
Wrap the dough in plastic wrap and refrigerate for 3 hours.
Divide the dough into two equal parts and shape into sticks about 20mm thick. Cut the sticks into 15mm pieces and roll them up.
Sprinkle powdered sugar all over the dough.
Place on a baking sheet lined with parchment paper.
Preheat the oven to 150°C and bake for 25 minutes, then remove from the baking sheet.

Sweet treats with Sasha: baking chocolate amaretti cake
Welcome to Sasha's bakery! Today, she is making chocolate amaretti cake using some of the cookies baked before and mixing them with almonds and chocolate - see the recipe below. Have fun baking and enjoy your amazing cake (not too sweet and not too rich) and precious time with your family!

3/4 cup chopped baking chunks - dark chocolate
1 cup slivered almonds
1-2 cups amaretti cookies (depends on the size of the cookies) - about 2 ounces
1/2 cup butter
2 teaspoons orange zest
4 large eggs
unsweetened cocoa powder for garnish.
This recipe doesn't require making a topping, but Sasha made it following the recipe below:
10 tablespoons unsalted butter, 1 cup of sugar, 4 ounces melted chocolate (dark or semi-sweet)
Cream together the butter and sugar in a mixing bowl and stir in the melted chocolate. Spread the chocolate topping on the sides and top of the cake. Decorate it with chocolate curls and cool the cake before serving.

Torta Caprese

Ingredients
1 1/2 cups (63%) bittersweet chocolate chips
2 sticks (1 cup) unsalted butter, plus more for the pan
5 large eggs, separated
1/4 teaspoon kosher salt
1 cup granulated sugar
1 1/2 cups almond flour
1 teaspoon pure vanilla extract
Confectioners' sugar, for dusting
Directions
Place the chocolate and butter in the top of a double boiler and melt until smooth. Cool slightly, until just warm to the touch.
Preheat the oven to 350 degrees F. Butter the inside of a 9-inch springform pan.
Place the egg whites in a medium bowl with the salt. Place the yolks in a slightly larger bowl with the granulated sugar. Using a handheld mixer, beat the whites on medium speed until stiff peaks form, about 2 minutes. Then beat the egg yolks on medium speed until light, pale and fluffy, about 1 1/2 minutes. Using a rubber spatula, stir the chocolate mixture, almond flour and vanilla into the yolks. In 2 batches, fold the whipped whites into the chocolate base. Pour the mixture into the prepared pan and bake until puffed and beginning to crack on top, about 40 minutes. Cool completely on a wire rack.
When cool, run a thin knife around the edge of the pan to release the cake. Remove the outside ring and dust the top with confectioners' sugar.
